EVALUASI MUTU TEH HITAM CRUSHING, TEARING, AND CURLING (CTC) DENGAN METODE STATISTICAL PROCESS CONTROL DI PT PERKEBUNAN NUSANTARA XII KEBUN KERTOWONO, LUMAJANG, JAWA TIMUR

PT Perkebunan Nusantara XII Kebun Kertowono merupakan perusahaan milik PTPN XII Persero yang memproduksi teh hitam CTC. Teh hitam dihasilkan dari pengolahan pucuk tanaman (Camellia sinensis). Penyimpangan parameter mutu masih ditemukan pada teh yang dihasilkan, yang menyebabkan proses produksi menjadi lebih lama ataupun dapat mempengaruhi penjualan produk. Evaluasi mutu teh hitam dilakukan pada jenis Mutu I dengan menilai parameter appearance, liquor, infused leaf, dan kadar air menggunakan metode statistical process control. Berdasarkan hasil evaluasi, pada semua parameter mutu untuk setiap jenis teh masih terdapat proses yang berada di luar pengendalian. Pada parameter mutu untuk setiap jenis teh masih terdapat kinerja proses yang rendah dalam menghasilkan keseragaman mutu, kecuali pada teh PF1 parameter infused leaf yang mampu menghasilkan keseragaman mutu tinggi. Parameter yang memiliki frekuensi penyimpangan tertinggi pertama yaitu kadar air yang disebabkan oleh faktor tenaga kerja (man) yaitu pembukaan klep pemasukan bubuk tidak sesuai standar dan faktor lingkungan (environment) yaitu kondisi ruang pembakaran yang tidak nyaman, usulan perbaikan untuk faktor tenaga kerja yaitu peningkatan pengawasan dari mandor, mandor besar, dan astekpol, usulan perbaikan untuk faktor lingkungan yaitu pekerja secara bergantian menjaga nyala api. Parameter mutu kedua yaitu appearance yang disebabkan oleh faktor tenaga kerja (man) yaitu kurangnya pengawasan mandor, usulan perbaikan yaitu dengan meningkatkan pengawasan dari mandor, mandor besar dan astekpol, serta peningkatan kualitas tenaga kerja dengan memberikan pengarahan kepada mandor pemetikan ketika briefing sebelum bekerja.

PT Perkebunan Nusantara XII Kebun Kertowono is a company owned by PTPN XII (Persero) which produces black tea with CTC process. Black tea is produced by processing the buds of tea plants (Camellia sinensis L.). Quality control is carried out to ensure the quality parameters of tea are in accordance with company standars, but deviations in the quality parameters still occur. The deviation of quality parameters cause the production process to be longer or can affect the product sales. Evaluation of black tea quality was carried out on tea type I by assessing appearance, liquor, infused leaf and water content parameters using statistical process control methods. Based on the result of evaluation, in all quality parameters of each type of tea, there is still processes that are out of control. In the quality parameters for each type of tea, there is still a low process performance to producing high quality uniformity, except for PF1 tea in infused leaf parameter which is capable of producing high quality uniformity. Parameters that have tthe highest frequency of deviation are water content that caused by labor factors (man), that opening of the tea entry valve is not in accordance with the standard and the environmental factor, that is the combustion chamber is not comfortable. Suggestions for improvement for labor factors are improving supervision of the foreman, the lead foreman, and Astekpol. Suggestions for environmental factors is workers who are moved to replace the fire. The second parameter is appearance caused by labor factors (man) the lack of oversight of the foreman, the suggestion for improvement is by increasing the supervision of the foreman, the foreman and Astekpol, and improving the quality of the workforce by giving direction to the picking foreman when briefing before work.
