ANALISIS PREFERENSI KONSUMEN DAN WILLINGNESS TO PAY TERHADAP MINUMAN KOPI MENGGUNAKAN PENDEKATAN CONSUMER NEUROSCIENCE

Kopi merupakan komoditas penting di Indonesia dengan nilai ekonomi dan sosial yang tinggi, sehingga pemahaman terhadap preferensi dan penilaian ekonomi konsumen menjadi semakin penting seiring meningkatnya konsumsi kopi. Penelitian ini bertujuan menganalisis preferensi konsumen dan willingness to pay terhadap minuman kopi menggunakan pendekatan consumer neuroscience melalui pengukuran sinyal otak dan respons fisiologis.
Penelitian menggunakan desain eksperimen faktorial 2×2×2 dengan variabel asal kopi Arabika (Gayo dan Kintamani), metode penyeduhan (filter dan espresso), dan ketersediaan informasi produk. Preferensi dan WTP diukur menggunakan kuesioner hedonik, sedangkan respons otak dianalisis menggunakan Frontal Alpha Asymmetry dan Prefrontal Asymmetry Index Gamma serta respons fisiologis menggunakan Skin Conductance Response.
Hasil penelitian menunjukkan bahwa preferensi konsumen dipengaruhi oleh informasi produk serta interaksi antara informasi dan asal kopi, sementara interaksi antara informasi dan metode penyeduhan berpengaruh terhadap respons otak yang berkaitan dengan kecenderungan suka atau tidak suka. Kesediaan membayar dipengaruhi oleh informasi produk, asal kopi, metode penyeduhan, interaksi antara metode penyeduhan dan informasi, serta interaksi antara informasi, jenis kopi, dan gender yang berkaitan dengan respons penilaian. Respons sistem saraf otonom tidak menunjukkan pengaruh yang signifikan. Selain itu, respons fisiologis tidak berhubungan signifikan dengan preferensi, namun memiliki keterkaitan terbatas dengan WTP. Ketika dianalisis bersama dengan niat membeli, niat membeli dipengaruhi oleh preferensi dan merupakan faktor yang lebih dominan dalam kesediaan membayar.
Coffee is an important commodity in Indonesia with significant economic and social value, making the understanding of consumer preferences and economic valuation increasingly important as coffee consumption rises. This study aims to analyze consumer preferences and willingness to pay for coffee beverages using a consumer neuroscience approach through the measurement of brain signals and physiological responses.
This study employed a 2×2×2 factorial experimental design with three variables: Arabica coffee origin (Gayo and Kintamani), brewing method (filter and espresso), and the availability of product information. Preference and WTP were measured using a hedonic questionnaire, while neural responses were analyzed using Frontal Alpha Asymmetry and the Prefrontal Asymmetry Index Gamma, and physiological responses were measured using Skin Conductance Response.
The results show that consumer preference is influenced by product information and the interaction between information and coffee origin, while the interaction between information and brewing method affects brain responses related to like–dislike tendencies. Willingness to pay (WTP) is influenced by product information, coffee origin, brewing method, the interaction between brewing method and information, as well as the interaction between information, coffee type, and gender, which is associated with valuation-related neural responses. Autonomic nervous system responses do not show a significant effect. Furthermore, physiological responses are not significantly related to preference, but show a limited association with WTP. When analyzed together with purchase intention, preference influences purchase intention, and purchase intention emerges as a more dominant factor in determining willingness to pay.
