KONTRUKSI PRODUKSI RUANG DI RESTORAN PRACIMASANA, PURA MANGKUNEGARAN, SURAKARTA: MENJAGA MEMORI KOLEKTIF MELALUI PENGALAMAN DAN GAYA HIDUP KULINER CULTURAL FINE DINING

This research examines the construction of space and cultural elements in Pracimasama Restaurant, Pura Mangkunegaran, as a strategy to preserve Javanese culture, especially Mangkunegaran culture, in the dynamics of modernization. The main focus is directed at Pracimasana as a representation of cultural fine dining that integrates royal culinary traditions with contemporary innovations, then influences social interactions and visitors' culinary experiences. This research uses a qualitative method with a phenomenological approach, involving 12 resource persons through in-depth interviews, participant observation, and literature review. The analysis was conducted using Lefebvre's theoretical framework of space production, Maurice Halbwachs' collective memory, and Pierre Bourdieu's distinction. The results show that Pracimasana Restaurant does not solely function as an exclusive culinary space, but also as a medium for preserving cultural values that revive collective memory through manners, dress code, and presentation aesthetics. The collective memory is also the result of spatial production constructed by Mangkunegaran. The findings show that the visual dimension, spatial atmosphere, and cultural narrative are prioritized over taste and price, in line with the phenomenon of beautiful dining in urban society that has relevance to the distinction of visitors. The revitalization of Pracimasana Restaurant has implications for strengthening Mangkunegaran's cultural identity, developing the local economy, and creating an inclusive and sustainable space for public interaction.
