Analisis Kinerja Rantai Pasok untuk Peningkatan Nilai Tambah di PT Mazaraat Lokanatura Indonesia

Industri pengolahan susu sangat dipengaruhi oleh berbagai faktor eksternal yang fluktuatif, seperti perubahan permintaan konsumen, ketersediaan bahan baku susu, dan tren pasar. Selain itu, keberlanjutan juga telah muncul sebagai keunggulan kompetitif selain biaya, kualitas, dan fleksibilitas. PT Mazaraat Lokanatura Indonesia merupakan salah satu produsen produk olahan susu berupa cheese dan creamery di provinsi D. I. Yogyakarta yang telah berdiri sejak tahun 2015. Dalam proses produksinya, PT Mazaraat Lokanatura Indonesia menggunakan bahan baku susu yang bersumber dari peternak lokal. Namun, pasokan susu yang fluktuatif dapat berdampak terhadap produktivitas perusahaan yang kurang maksimal. Selain itu, dari beberapa produk yang dihasilkan PT Mazaraat Lokanatura Indonesia, keju dengan merek dagang “Athan” yaitu jenis keju camembert merupakan produk aged cheese yang best seller. Rantai pasok produk tersebut dihadapkan pada beberapa permasalahan yaitu stockout akibat fluktuasi permintaan, lamanya proses restock, serta penurunan kualitas berpotensi meningkatkan produk retur. Oleh karena itu, penelitian ini dilakukan untuk mengidentifikasi alur rantai pasok, mengukur dan menganalisis kinerja rantai pasok PT Mazaraat Lokanatura Indonesia, serta menyusun usulan strategi perbaikan terhadap kinerja yang kurang baik. Pengukuran dan analisis kinerja rantai pasok dilakukan dengan menggunakan kerangka kerja SCOR Digital Standard yang dikombinasikan dengan Fuzzy AHP. Adapun analisis akar masalah terhadap kinerja yang kurang baik dilakukan dengan menggunakan tools diagram Ishikawa. Hasil perhitungan kinerja rantai pasok PT Mazaraat Lokanatura Indonesia secara keseluruhan adalah sebesar 87,195 yang tergolong pada tingkat good. Namun, KPI Yield masih termasuk tidak memuaskan karena masih belum dapat terkontrol dengan baik dengan persentase terendah yaitu sebesar 14,10%. Yield yang tidak terkontrol dengan baik dapat mengurangi fleksibilitas perusahaan dalam merespons permintaan. Oleh karena itu, perusahaan dapat meningkatkan kompetensi karyawan melalui pelatihan yang terstruktur, terutama dalam pengujian kualitas susu dan penanganan bahan baku. Selain itu, perusahaan dapat meningkatkan sistem produksi dengan pendekatan lean manufacturing dan penerapan prinsip continuous flow.

The dairy processing industry is heavily influenced by various volatile external factors, such as changes in consumer demand, availability of dairy raw materials, and market trends. In addition, sustainability has also emerged as a competitive advantage in addition to cost, quality, and flexibility. PT Mazaraat Lokanatura Indonesia is one of the producers of dairy products in the form of cheese and creamery in the province of D. I. Yogyakarta which has been established since 2015. In the production process, PT Mazaraat Lokanatura Indonesia uses milk raw materials sourced from local farmers. However, the fluctuating milk supply can have an impact on the company's less than optimal productivity. In addition, of the several products produced by PT Mazaraat Lokanatura Indonesia, cheese with the brand “Athan”, a type of camembert cheese, is the best seller aged cheese product. The supply chain of this product is faced with several problems, namely stockouts due to fluctuations in demand, the length of the restock process due to the cheese ripening process, and quality degradation with the potential to increase returned products. Therefore, this study was conducted to identify the supply chain flow, measure and analyze the supply chain performance of PT Mazaraat Lokanatura Indonesia, and develop a proposed improvement strategy for poor performance. Measurement and analysis of supply chain performance is carried out using the SCOR Digital Standard framework combined with Fuzzy AHP. The root cause analysis of poor performance is carried out using the Ishikawa diagram tools. The results of the overall supply chain performance of PT Mazaraat Lokanatura Indonesia are 87,195 which is classified at a good level. However, the Yield KPI is still unsatisfactory because it is still not well controlled with the lowest percentage of 14,10%. Yield that is not well controlled can reduce the company's flexibility in responding to demand. Therefore, the company can improve employee competencies through structured training, especially in milk quality testing and raw material handling. In addition, the company can improve the production system with a lean manufacturing approach and the application of continuous flow principles.
