Commodity markets rely on prices, which are all regulated based on supply and demand, thus not considering other factors. Most producers do not earn sufficient profits. In July 2017, a study by Fairtrade found that many coffee farmers did not earn enough profits from the sale of coffee commodities. Commodity sales focus on the offered price, and if a commodity does not add value, there will be a price war among commodity product providers (Purnamawati, 2022).
This research aims to make recommendations for value-added coffee innovations and create business model scenarios that focus on coffee commodity value innovation. Exploring the potential value-added products based on consumer desires and adjusted to the company's resource capabilities, the design thinking method is used.
