Efisiensi Persediaan dan Pemetaan Layanan pada Tanean Creative Hub dengan Menggunakan Economic Order Quantity (EOQ) & Service Blueprint

Tanean Creative Hub merupakan sebuah kafe sekaligus wadah bagi para komunitas untuk berkumpul dan berkreasi. Sistem persediaan Tanean saat ini masih menggunakan metode standar, pembelian kembali untuk bahan baku dilakukan ketika stok menipis dan kuantitas pembelian monoton, tidak disesuikan dengan kebutuhan. Perhitungan menggunakan metode EOQ pada sistem persediaan Tanean mampu menekan biaya persediaan, dengan demikian harga pokok penjualan (HPP) juga dapat ditekan.

Tujuan penelitian yang pertama yaitu menghitung kuantitas optimal yang dapat dipesan untuk bahan baku persediaan cappuccino di Tanean. Tujuan kedua, menghitung biaya persediaan produk cappuccino di Tanean apabila pengadaan persediaan menggunakan metode EOQ. Tujuan ketiga, memetakan layanan di Tanean menggunakan service blueprint. Metode penelitian yaitu kuantitatif dengan teknik analisis data yaitu deskriptif, alat pengumpulan data yang digunakan yaitu data historis dan observasi.

Hasil penelitian yaitu sebagai berikut, kuantitas optimal yang dapat dipesan yaitu 11 kg kopi, 26 pcs susu UHT, 21 pcs susu SKM, 21 pcs susu evaporasi, dan 7 pcs gula cair. Total biaya persediaan menggunakan metode EOQ sebesar Rp48.329.228, mereduksi total biaya sebesar 7%. Pemetaan layanan Tanean menggunakan service blueprint dapat dilihat secara lengkap pada penelitian ini.­­­

TaneanCreative Hub is a cafe as well as a place for the community to gather and be creative. Tanean's current inventory system still uses the standard method, repurchase raw materials when stocks are low and the purchase quantity is monotonous, not according to needs. Calculations using the EOQ method on the Tanean inventory system are able to reduce inventory costs, thereby reducing the cost of goods sold (COGS).

The first research objective is to calculate the optimal quantity that can be ordered for raw materials for cappuccino supplies at Tanean. The second objective is to calculate the inventory cost of cappuccino products at Tanean if the inventory is procured using the EOQ method. The third objective, mapping services in Tanean using service blueprint. The research method is quantitative with descriptive as data analysis techniques, data collection tools used are historical data and observation.

The results of the study are as follows, the optimal quantity that can be ordered is 11 kg of coffee, 26 pcs of UHT milk, 21 pcs of SKM milk, 21 pcs of evaporated milk, and 7 pcs of liquid sugar. The total cost of inventory using the EOQ method is IDR 48,329,228, reducing the total cost by 7%. Tanean service mapping using service blueprint can be seen in full in this study.
