BREAD, PASTRY, CAKE, BISCUIT, DAN COOKIE MENURUT PENUTUR BAHASA JAWA: KAJIAN LINGUISTIK KOGNITIF TENTANG KATEGORISASI, PROTOTIPE, DAN MODEL PERLUASANNYA

Dalam bahasa Inggris, bread, pastry, cake, biscuit, dan cookie merupakan kategori baked goods atau makanan yang dipanggang. Kelima makanan itu dikelompokkan berdasarkan cara pembuatan, bahan, tekstur dan fungsi. Sementara itu, orang Jawa yang berbahasa Jawa dan Indonesia memiliki pola dan konsep kategorisasi yang berbeda. Tujuan penelitian ini adalah mendeskripsikan kategorisasi bread, pastry, cake, biscuit, dan cookie dalam pikiran orang Jawa. Data dikumpulkan dengan menggunakan kuesioner yang diberikan kepada 135 orang menggunakan teknik snowball sampling. Untuk mencapai tujuan tersebut, langkah pertama yang dilakukan ialah mendaftar atau menginventarisasi leksikon kelima makanan tersebut dalam bahasa Jawa yang muncul dari tanggapan responden dan mencatat informasi yang berkaitan dengannya. Selanjutnya dilakukan analisis terhadap leksikon hasil inventarisasi tersebut. Dari hasil analisis data diketahui bahwa roti dan roti tawar adalah prototipe untuk bread, roti adalah prototipe untuk pastry 1 (pastry dengan selai), pastry 2 (croissant), chocolate cake, dan cookie, kue adalah prototipe untuk white cake, dan biskuit adalah prototipe untuk biscuit. Hasil penelitian juga menunjukkan bahwa orang Jawa mengategorikan kelima makanan tersebut secara perseptual dan konseptual. Terdapat pula dua model kategorisasi yang muncul yaitu Model Kognitif Ideal (ICM) dan model metonimik. Selain itu data juga menunjukkan bahwa istilah-istilah yang digunakan oleh responden untuk menamai kelima makanan tersebut ternyata banyak mendapat pengaruh bahasa lain.

In English, bread, pastries, cakes, biscuits, and cookies are categorized as baked goods. These five foods are grouped based on how they are made, their ingredients, their textures and functions. Meanwhile, Javanese people who speak Javanese and Indonesian have different categorization patterns and concepts. The purpose of this study is to describe the categorization of bread, pastry, cake, biscuit, and cookies in the minds of the Javanese. The study was conducted using a questionnaire given to 135 people using the snowball sampling technique. To achieve this goal, the first step was to register or take an inventory of the lexicon of five foods in Javanese that emerged from the respondents' responses and record the information related to them. Furthermore, an analysis of the lexicon from the inventory was carried out. From the results of data analysis, the research proves that roti and roti tawar are the prototypes of bread, roti is the prototype of pastry 1 (pastry with jam), pastry 2 (croissant), chocolate cake, and cookie, kue is the prototype of white cake, and biskuit is the prototype of biscuit. The results of this study also prove that the Javanese people categorize these five foods perceptually and conceptually. There are also two categorization models namely the Ideal Cognitive Model (ICM) and the metonymic model. In addition, the data also shows that the terms used by the respondents to name the five foods are mostly influenced by other languages.
