Analisis Risiko Rantai Pasok Pada Industri Pengolahan Susu (Studi Kasus di CV. Cita Nasional Kabupaten Semarang, Jawa Tengah)

Rantai pasok merupakan suatu kegiatan yang penting dalam aliran produksi susu CV Cita Nasional. Dalam setiap kegiatan rantai pasok di perusahaan tidak akan terlepas dari risiko yang terjadi, terlebih lagi CV. Cita Nasional merupakan industri yang mengolah susu segar menjadi susu pasteurisasi, dimana susu merupakan bahan yang rentan terkontaminasi. Risiko yang dialami memiliki kejadian dan dampak yang berbeda-beda, sehingga perlu dilakukan analisis. Tujuan dari penelitian ini adalah untuk mengidentifikasi kejadian risiko, menganalisis dan menentukan prioritas sumber risiko, dan merancang aksi mitigasi dari sumber risiko yang diprioritaskan. Metode pengumpulan data menggunakan cara observasi, indepth interview dan Focus Group Discussion (FGD) terhadap risk owner sebagai narasumber. Tahapan penelitian dilakukan dengan risk identification, risk assessmen (risk analyse dan risk evaluation), dan risk mitigation. Identifikasi kejadian risiko berdasarkan dimensi Supply Chain Operations Reference (SCOR) level 1. Analisis risiko dan penentuan prioritas sumber risiko menggunakan pendekatan metode Risk Failure Mode and Effect Analysis (RFMEA) dan House of Risk I (HOR). Perancangan aksi mitigasi dari sumber risiko yang diprioritaskan dilakukan menggunakan House of Risk II. Berdasarkan hasil penelitian teridentifikasi sebanyak 23 Risk Event (kejadian risiko) akibat dari 28 Risk Agent (sumber risiko). Penelitian menunjukan prioritas Risk Agent sebesar 25.7 % diantaranya yaitu over produksi, kerusakan mesin dan kesalahan teknis oleh pekerja. Berdasarkan 3 sumber risiko terpilih, strategi proaktif untuk memitigasi risiko yang diprioritaskan adalah penyesuaian kapasitas produksi, inspeksi oleh operator, forecasting yang tepat, evaluasi terhadap kinerja pekerja secara berkala, disiplin pekerja, penjadwalan maintenance pada mesin dan peralatan, kontrol stok secara disiplin dan reward and punishment.

Supply chain is an important activity in the flow of milk production CV Cita Nasional. In every supply chain activity in the company will not be separated from the risks that occur, even more CV. National Cita is an industry that process fresh milk into pasteurized milk, where milk is a material that is vulnerable to contamination. The risks experienced have different events and impacts, so analysis needs to be done. The purpose of this study was to identify risk events, analyze and determine priority sources of risk, and design mitigation actions from priority risk sources. Methods of data collection using observation, indepth interview and Focus Group Discussion (FGD) to the risk owner as a resource. Research stages are carried out with risk identification, risk assessments (risk analyzes and risk evaluation), and risk mitigation. Identify risk events based on the dimensions of Supply Chain Operations Reference (SCOR) level 1. Risk analysis and prioritization of risk sources using Risk Failure Mode and Effect Analysis (RFMEA) and House of Risk I (HOR) approaches. The design of mitigation action from prioritized risk sources is conducted using House of Risk II. Based on the research results identified 23 Risk Event (risk events) resulting from 28 Risk Agent (source of risk). Research shows the priority Risk Agent of 25.7% of which is over production, machine damage and technical errors by workers with a percentage of 5.62%. Based on 3 selected risk sources, the proactive strategy to prioritize risk mitigation is the adjustment of production capacity, the inspection by the operator, the mature forecasting , the evaluation of the worker's performance on a regular basis, the employee discipline, the scheduling of maintenance on the machine and equipment , disciplined stock control and reward and punishment.
