Produktivitas kentang selama sepuluh tahun terakhir mengalami penurunan. Kondisi tersebut akan berpengaruh terhadap penawaran kentang. Penelitian ini bertujuan untuk mengetahui: (1) faktor-faktor yang mempengaruhi produksi kentang, (2) faktor-faktor yang mempengaruhi penawaran kentang, dan (3) elastisitas penawaran kentang. Metode yang digunakan dalam penelitian ini adalah metode deskriptif. Penelitian ini dilakukan di Desa Serang dan Desa Surengede, Kecamatan Kejajar, Kabupaten Wonosobo pada akhir tahun 2015 dengan sampel petani kentang sebanyak 30 responden. Faktor-faktor yang mempengaruhi produksi kentang dan penawaran kentang dianalisis menggunakan metode Ordinary Least Square (OLS). Penawaran kentang diestimasi secara langsung dengan menurunkan fungsi produksi melalui penggunaan input optimal. Elastisitas penawaran kentang diperoleh dari nilai koefisien regresi dari fungsi penawaran kentang. Hasil penelitian menunjukkan: (1) faktor-faktor yang mempengaruhi produksi kentang secara signifikan dan positif adalah pupuk CM dan luas lahan, (2) faktor-faktor yang mempengaruhi penawaran kentang secara signifikan adalah harga bibit secara negatif sedangkan luas lahan secara positif, dan (3) penawaran kentang bersifat inelastis terhadap perubahan harga bibit dan luas lahan. Harga kentang tidak berpengaruh signifikan terhadap penawaran kentang, karena kurang bervariasinya harga kentang di tingkat petani sehingga disarankan untuk penelitian selanjutnya mengkaji mengenai respon penawaran kentang jangka panjang karena analisis penawaran kentang dalam penelitian ini bersifat jangka pendek.

Last ten years the potato productivity has decreased. These conditions will affect the supply of potato. This research aims to determine: (1) the factors that influence potato production, (2) the factors that influence the supply of potato, and (3) supply of potato elasticity. The method used in this research is descriptive method. This study was conducted in Serang village and Surengede village, Kejajar Subdistrict, Wonosobo Regency in the end of 2015 with 30 respondents. The factors that influence potato production and supply of potato were analyzed using Ordinary Least Square (OLS). The supply of potato was directly estimated by reducing the production function through the use of optimum input. Supply of potato elasticity obtained from the regression coefficient of the supply of potato function. The result of this research shows that: (1) the factors that influence potato production significantly and positively is a CM fertilizer and land area, (2) the factors that influence the supply of potato is the price of seed (negative influence) and land area (positive influence), and (3) the supply of potato is inelastic to change price of seed and land area. There is no significance effect of the potato price to the supply of the potato, because variation less of potato prices in farmers so it is advisable to study further examines the long term the supply response of potato because for analyzed supply of potato in this study in short term.
