PT Mayora Indah Jatake II merupakan salah satu perusahaan yang bergerak dibidang industri makanan ringan yaitu biskuit, dengan salah satu produknya yaitu biskuit Roma Kelapa. Pada proses produksi yang dilakukan, PT Mayora Indah Jatake II melakukan pengendalian mutu untuk menghasilkan produk yang berkualitas. Tujuan dari penelitian ini untuk mengetahui jenis cacat pada produk biskuit Roma Kelapa yang paling tinggi dan mencari penyebab kecacatan sehingga dapat memberikan alternatif solusi yang dapat dilakukan oleh perusahaan untuk meminimalisir kecacatan pada produk biskuit Roma Kelapa. Alat yang digunakan untuk pengendalian mutu yang digunakan yaitu diagram pareto, peta kontrol, dan diagram ishikawa. Diagram Pareto digunakan untuk menemukan permasalahan produk cacat. Peta kontrol menunjukkan apakah proses masih dalam batas kendali atau tidak. Diagram Ishikawa akan mengidentifikasi keterkaitan antara penyebab dengan akibat. Diagram Pareto yang dibuat menunjukkan urutan jenis kecacatan dari produk dengan nilaicacat paling tinggi yaitu biskuit yang memiliki ketebalan yang tidak sesuai spesifikasi perusahaan (51,5%), nilai pH produk yang tidak sesuai (45%) dan bobot tidak sesuai (3,5%).Pada peta kontrol X-bar menunjukkan bahwa semua data berada di luar batas kendali atas. Peta Kontrol R yang telah dibuat dengan data dimensi ketebalan biskuit Roma Kelapa menunjukkan terdapat satu data yang berada diluar batas kendali. Sementara itu, hasil Individual Chart menunjukkan bahwa proses tidak terkendali, dilihat dari adanya 223 dari 250 titik data yang keluar dari batas kendali. Hasil analisa dengan Diagram Ishikawa menunjukkan bahwa kecacatan pada ketebalan biskuit yang tidak sesuai dengan spesifikasi perusahaan disebabkan oleh mesin pencetak dan BOM yang belum diperbaharui. Limited Liability Company (PT) Mayora Indah Jatake II is a company that engaged in snack foodindustry, with the one of their product is Roma Kelapa biscuit. On their production process, PT Mayora Indah Jatake II perform several quality control to produce high quality products. The purpose of this study is to identify the defects in Roma Kelapa biscuit products and identify the causes of defects, which can then provide several alternative solutions that can be implemented by the companyto minimalize or even eliminate defects in the products. The tools used for the biscuit quality control is the Pareto Diagram, control chart dan Ishikawa Diagram. The Pareto Diagram is used for discovering the main problem on the product defection. The control chart is used for indicate whether the carried process is still in the control limitor not. The Ishikawa Diagram would indicate the connecton/interrelatedness between an issue and the impact. Pareto Diagram showed that from the most prioritized order type of defection to be handled was the product thickness that did not meet the company specification (51,5%), the pH was not appropriate (45%), and mismatches product weight(3,5%). The R control chart which was created from the data of Roma Kelapa biscuit thickness indicated that there was a data point that still out of control. The Xcontrol chart indicated that the data point was still on the upper of control limit. Meanwhile, the Individual Chart result that the process was still on the upper of control limit, it was proven through the finding of the 223 of 250 data points which were out of the control. The analysis using the Ishikawa Diagram indicated that the weight defection which did not meet the company specification was caused by the biscuit pressing machine and bill of material that has not been updated.
