PERBANDINGAN PERSENTASE KARKAS SAPI SIMPO, LIMPO DAN PO DI RUMAH POTONG HEWAN GIWANGAN

Ada berbagai macam bangsa sapi potong yang menghasilkan persentase karkas yang berbeda-beda.Persentase karkas adalah perbandingan antara bobot karkas dengan bobot hidup sapi sebelum dilakukan tindakan pemotongan kemudian dikalikan 100 %. Tujuan penulisan tugas akhir ini adalah mengetahui perbandingan persentase karkas jenis sapi SimPO, LimPO dan PO di Rumah Potong Hewan Giwangan. Pengambilan sampel dilakukan pada tanggal 29 Februari 2016 sampai 1 Maret 2016 dan diperoleh sebanyak 23 ekor sapi, yaitu 10 sapi LimPO, 8 sapi SimPO dan 5 sapi PO. Berat karkas yang dihasilkan dari semua sampel rata-rata diatas 150 kg dan berat hidup rata-rata semua sampel diatas 300 kg. Hasil yang diperoleh dari perhitungan rata-rata persentase karkas adalah sapi LimPO 51,083 %, sapi SimPO 51,26 % dan sapi PO 48,88 %. Hasil keseluruhan dapat disimpulkan, bahwa persentase karkas tertinggi sampai terendah berturut-turut adalah sapi SimPO, sapi LimPO dan sapi PO.

There are many kindsbreed of cow that produce different beef cattle carcass percentage. The carcass presentage is a ratio between carcass weight with the live weight of cattle, that measured prior to slaughter and then multiplied by 100%. The purpose of the research is to determine the percentage ratio of carcass from Simmental Ongole crossbreed, Limousin Ongole crossbreed and Ongole crossbreed at Giwangan Slaughter House, Yogyakarta. Sampling was taken on February 29th until March 1st, 2016 and acquired as many as 23 head of cattle, which is 10 Limousin Ongole crossbreed, Simmental Ongole crossbreed 8 and 5 Ongole crossbreed. The result showed that the carcass weight of samples carcass are above the average weight of 150 kgs and the average live are above 300 kgs. The calculation of the average percentage carcass of Limousin Ongole crossbreed 51.083%, Simmental Ongole crossbreed 51, 26%and Ongole crossbreed 48.88%. The overall result can be concluded that the highest percentage of carcass are Simmental Ongole crossbreed and than Limousin Ongole crossbreed and the lowest percentage of carcass Ongole crossbreed.
