CV Cita Nasional merupakan industri pengolahan susu segar. Susu merupakan produk pangan yang memiliki kandungan gizi yang kompleks sehingga rentan akan kontaminasi dari bakteri. Identifikasi cara produksi pangan olahan yang baik pada industri dilakukan untuk mencegah potensi bahaya pada produk dimana kontaminasi bisa berasal dari lingkungan kerja, bangunan maupun karyawan. Identifikasi penyebab ketidaksesuaian industri dengan pedoman Peraturan Menteri Perindustrian No 75 tahun 2010 tentang Cara Produksi Pangan Olahan yang Baik. Identifikasi dilakukan dengan observasi dan pengamatan langsung di dalam industri dan dilakukan brainstorming, lalu digambarkan dengan diagram pareto. Dilakukan analisa untuk mengetahui akar permasalahan dari aspek ketidaksesuaian dan digambarkan dengan diagram ishikawa. Berdasarkan hasil observasi kesesuaian CV Cita Nasional mencapai 79.42% sesuai dengan jumlah 10 aspek dari 18 aspek dalam CPPOB 2010 dimana hasil tersebut bisa menjadi saran perbaikan untuk industri dalam menerapkan CPPOB dan meningkatkan sanitasi dan mutu pada produk itu sendiri. Ketidaksesuaian terjadi pada aspek bangunan dikarenakan ventilasi tidak mampu mengatur bau dan suhu didalam ruangan juga tidak ada kasa pada ventilasi.

CV Cita Nasional is industry processing fresh milk. Milk is a food product has a complex nutrient content so that the vulnerable will be contamination from bacteria. Identification of ways in processed food production in the industry do to prevent potential hazards on products where the contamination could have come from the working environment, as well as employees. Identification of the cause of the discrepancy with the industry Minister of industry Regulation Guidelines No. 75 in 2010 on how good the processed food production. Identification is done with observation and direct observation in the industry and do brainstorming, Pareto diagram described then. Done the analysis to find out the root of the problem of the mismatch and illustrated with a diagram of ishikawa. Based on the results of observation of conformity 79.42% reach of CN in accordance with the number of 10 aspects of the 6 aspects in CPPOB in 2010 where the result could be a suggestion of improvement for the industry in applying CPPOB and improving sanitation and the quality of the product itself. The discrepancy occurred in the aspect of the building because the ventilation is not able to regulate the temperature in the room smell and also there is no gauze on ventilation
