PT. Pagilaran Unit Produksi Batang merupakan perusahaan penghasil teh hitam. Teh hitam merupakan salah satu jenis teh yang mengalami proses oksidasi enzimatis. Produk teh hitam dipasarkan di pabrik-pabrik dalam dan luar negeri. Produk teh hitam yang paling banyak dipasarkan adalah jenis PF II. Hal ini dikarenakan meyesuaikan permintaan konsumen. Kadar air teh hitam merupakan salah satu parameter yang harus dikendalikan karena sifat teh yang higroskopis. Pengendalian secara statistik kadar air sebagai parameter mutu teh hitam jenis PF II bertujuan untuk mengendalikan variasi kadar air sesuai standar perusahaan. Analisa dilakukan berdasarkan data periode 07 Juli 2015 � 11 Juli 2015 dan 25 Juli 2015 � 08 Agustus 2015 berupa kadar air, kelembaban, dan suhu. Analisa kadar air menggunakan Infrared Moistured Balance. Pengendalian statistik dilakukan dengan alat bantu check sheet, stratifikasi, control chart, dan Diagram Ishikawa. Berdaskan data analisa kadar air dengan standar perusahaan, periode 28 Juli 2015 dan 31 Juli 2015 mengalami out control, yaitu 7,5 % dan 7,8 %. Hal ini dikarenakan jenis petikan pada analisa pucuk didominasi oleh jenis petikan kasar serta terjadi kenaikan kelembaban dan penurunan suhu. Oleh karena itu, diupayakan perbaikan pada faktor � faktor yang mempengaruhi variasi kadar air produk PF II seperti mesin, metode, dan lingkungan kerja.

PT. Pagilaran Unit Produksi Batang is a producer company of black tea. Black tea is one type of tea that passed enzymatic oxidation process. Black tea products marketed in the factories of domestic and foreign. Black tea products most marketed are the type of PF II. This is because of adjust consumers demand. The water content of black tea is one of the parameters that must be controlled because of the hygroscopic nature of tea. Statistically control of water content as a quality parameter of black tea type PF II to control the variation of water content with standardized of the company. The analysis was made based on data from the period of July 7, 2015 - July 11, 2015 and July 25, 2015 - August 8, 2015 such as water content, moisture, and temperature. Analysis of water content using Infrared Moistured Balance. Statistically control perfomed with check sheet, stratification, control charts, and Ishikawa Diagram. Based on data analysis of water content with the standard of the company, the period of July 28 2015 and July 31, 2015 having out control, 7.5% and 7.8%. This is because the type of excerpt in the shoots analysis dominated by rough excerpt as well as an increase in moisture and decrease temperature. Therefore, tried to be repaired on the factors that affect the variation of water content PF II products such as machines, methods, and work environment.
