IMPLEMENTASI GOOD MANUFACTURING PRACTICES PADA RUMAH POTONG HEWAN BERSERTIFIKAT HALAL DI DAERAH ISTIMEWA YOGYAKARTA

Penelitian ini bertujuan untuk mengetahui pelaksanaan dan penerapan good manufacturing practices (GMP) pada Rumah Potong Hewan (RPH) bersertifikat halal di Daerah Istimewa Yogyakarta (DIY) dan mengetahui pengaruh implementasi GMP terhadap kualitas daging ditinjau dari uji TPC dan pH pada RPH yang bersertifikat halal di DIY. Materi penelitian terdiri atas pelaku usaha RPH di DIY dan daging sapi yang berasal dari mereka. Teknik pengambilan data responden penelitian ini adalah RPH yang bersertifikat halal di DIY. Jumlah responden adalah 16 RPH dari 22 yang bersertifikat halal di DIY. Pengumpulan data penelitian dilakukan dengan menggunakan kuesioner untuk mengetahui implementasi GMP yang meliputi pengamatan dan menilai secara langsung kegiatandi RPH dengan skor 1 sampai 5. Untuk mengetahui kualitas daging dilakukan uji Total Plate Count (TPC) dan uji keasaman (pH). Data yang terkumpul dianalisis dengan menggunakan uji Rank Spearman untuk mengetahui korelasi antara implementasi GMP dengan kualitas daging RPH bersertifikat halal di DIY. Hasil penelitian menunjukkan bahwa rata-rata nilai total skor GMP semua aspek adalah 332,75 yang menunjukkan hampir mendekati penerapan yang benar. Nilai rata-rata uji pH adalah 5,9 dengan skor 4 yang menunjukkan hampir mendekati penerapan yang benar. Nilai rata-rata uji TPC adalah 2,6x104 cfu/g dengan skor 4 yang menunjukkan hampir mendekati penerapan yang benar. Korelasi antara implementasi GMP dengan uji pH adalah nilai pada Rank Spearman yaitu 0,655 memiliki nilai t hitung yaitu 2,454, sedangkan nilai t tabel 0,05 yaitu 2,306 hal ini menunjukkan bahwa ada korelasi yang sangat nyata karena nilai t lebih besar daripada t tabel. Korelasi antara implementasi GMP dengan hitung uji TPC adalah nilai pada Rank Spearman yaitu 0,637 memiliki nilai t hitung yaitu 2,337, sedangkan nilai t tabel 0,05 yaitu 2,306, hal ini menunjukkan bahwa ada korelasi yang sangat nyata karena nilai t hitung lebih besar daripada t tabel. Hasil penelitian ini dapat disimpulkan bahwa pelaksanaan dan penerapan GMP pada RPH bersertifikat halal di DIY belum seluruhnya dilakukan dengan baik.Terdapat korelasi yang sangat nyata antara implementasi GMP dengan kualitas daging (nilai pH dan TPC) pada RPH yang bersertifikat halal di DIY.

The study aims to investigate the implementation of Good Manufacturing Practices (GMP) to determine meat quality and to determine the relationship of the implementation of the GMP and meat quality of halal certified cattle slaughterhouses in DIY. The study material consists of businessmen RPH at DIY and beef derived from them. Data capture techniques respondents research is certified halal RPH at DIY. The number of respondents was 16 of 22 RPH certified halal in DIY. Data collection was carried out by using questionnaire. Survey included observations and assess the activities with a score of RPH 1 to 5. Determined the quality of meat was through Total Plate Count (TPC) test and acidity (pH) of the meat devied from those RPH. The Spearman Rank test was used to determine the correlation between thei mplementation of GMP and meat quality in terms of TPC and Ph test. The results showed that the average value skore of all implementation GMP all aspect was 332.75 which show snearing the correct application. The average pH meat value is 5.9 with a score of 4 which show snearing the correct application. The average TPC value is 2.6x104 cfu/g with a score of 4 which show snearing the correct application. In terms of the correlation between the implementation of the GMP with a pH test was the value of the Rank Spearman was 0.655, had the value as 2.454 and the table 0.05 as 2.306. This value show that significantly high because the t value is bigger than t table. It could be concluded that the implementation and application of GMP in halal certified RPH in DIY has not been entirely implemented well. There was a significantly high correlation between the implementation of the GMP with meat quality (pH valueand TPC) on the halal certified to cattle slaughterhouses in DIY.
