Analisis Kelayakan dan Efisiensi Usaha Agroindustri Salak Pondoh di Kecamatan Turi Kabupaten Sleman

Penelitian ini bertujuan untuk mengetahui: (1) menganalisis kelayakan 7 macam produk agroindustri salak pondoh di Kecamatan Turi; (2) untuk mengetahui tingkat efisiensi relatif pada masing-masing agroindustri salak pondoh di Kecamatan Turi. Analisis kelayakan usaha menggunakan metode R/C ratio, produktivitas modal, produktivitas tenaga kerja dan titik impas (BEP). Analisis efisiensi menggunakan Data Envelopment Analysis (DEA) dengan asumsi Constant Return to Scale (CRS) orientasi input dan orientasi output untuk mengukur skor efisiensi dari masing-masing pengolah salak. Hasil penelitian menunjukkan bahwa R/C ratio sebesar 1,83 pada dodol, 1,99 pada wajik, 2,57 pada pada keripik, 6,13 pada kopi, 4,69 pada kerupuk, 3,39 pada karamel, 3,19 pada geplak. Produktivitas modal pada dodol sebesar 72%, wajik 41%, keripik 152%, kopi 494%, kerupuk 345%, karamel 219% dan geplak 205%. Produktivitas tenaga kerja pada dodol sebesar Rp.159.005,98/HKO, Rp.68.872,56/HKO pada wajik, Rp.270.086,31/HKO pada keripik, Rp.473.333,33/HKO pada kopi, Rp.480.000,00/HKO pada kerupuk, Rp.213.333,33/HKO pada karamel, 293.333,33/HKO pada geplak. BEP pada ketujuh olahan salak pondoh yaitu BEP penerimaan dodol Rp.2.416.218,79/tahun, Rp.7.946.918,03/tahun pada wajik, Rp.20.396.764,34/tahun pada keripik, Rp.316.918,83/tahun pada kopi, Rp.129.800,86/tahun pada kerupuk, Rp.72.890,99/tahun pada karamel dan Rp.80.389,59/tahun pada geplak sedangkan BEP kuantitas yaitu sebesar 42,82 kg pada dodol, 168,78 kg pada wajik, 139,07 kg pada keripik, 1,58 kg pada kopi, 1,62 kg pada kerupuk, 0,91 kg pada karamel dan 1,46 kg pada geplak. BEP harga yaitu sebesar Rp.29.004,61/kg pada dodol, Rp.40.646,40/kg pada wajik, Rp.57.262,51/kg pada keripik, Rp.34.063,72/kg pada kopi, Rp.17.050,70/kg pada kerupuk, Rp.23.613,28/kg pada karamel dan Rp.17.223,29/kg pada geplak. Pengolah salak pondoh di Kecamatan Turi yang efisien berjumlah 20% sedangkan pengolah salak inefisien berjumlah 80%. Sumber inefisiensi agroindustri salak pondoh adalah penggunaan input yang berlebihan dan produksi output yang belum mencapai target. Perbaikan efisiensi relatif dapat dilakukan dengan mengurangi input atau menambah output berdasarkan nilai penyesuaian yang direkomendasikan hasil analisis DEA.

This research aims to determine: (1) the feasibility analysis of 7 types of pondoh snake fruit, agro-industrial products in Turi district; (2) the relative efficiency level of pondoh snake fruit agroindustries in Turi district. The analysis of the feasibility utilizes the methods of R/C ratio, capital productivity, labor productivity and break-even point (BEP). The analysis of efficiency utilizes Data Envelopment Analysis (DEA) with the assumption of Constant Return to Scale (CRS) input and output orientations to measure the efficiency score of each pondoh snake fruit cultivator. The results shows that the R/C ratio are 1.83 on dodol, 1.99 on wajik, 2.57 on chips, 6.13 on coffee, 4.69 on crackers, 3.39 on caramel, and 3.19 on geplak. The capital productivity in dodol is 72%,while, 41% in wajik, 152% in chips, 494% in coffee, 345% in crackers, 219% in caramel and 205% in geplak.The labor productivity in dodol is Rp.159.005,98/HKO, Rp.68.872,56/HKO on wajik, Rp.270.086,31/HKO on chips, Rp.473.333,33/HKO on coffee, Rp.480.000,00/HKO on crackers, Rp.213.333,33/HKO in caramel, 293.333,33/HKO on geplak. BEP in the seven kinds of pondoh snake fruit cultivations which is namely BEP reception are, Rp.2.416.218,79/year on dodol, Rp.7.946.918,03/year on wajik, Rp.20.396.764,34 year on the chips, Rp.316.918,83/year on coffee, Rp.129.800,86/year on crackers, Rp.72.890,99/year in caramel and Rp.80.389,59/year on geplak, meanwhile, quantity BEP is 42.82 kg in dodol, 168.78 in wajik, 139.07 kg in the chips, 1.58 kg in the coffee, 1.62 kg in crackers, 0.91 kg in caramel, and 1.46 kg on geplak. The price BEP is Rp.29.004,61/kg on dodol, Rp.40.646,40/kg in wajik, Rp.57.262,51/kg in the chips, Rp.34.063,72/kg in coffee, Rp.17.050,70/kg in crackers, Rp.23.613,28/kg in caramel and Rp.17.223,29/kg in geplak. The efficient cultivator in Turi district is amounted to 20% while the inefficient cultivator is amounted to 80%. The sources of the inefficiency of pondoh snake fruit agroindustry are the excessive use of inputs, and the output production that has not reached the target. Some improvement on the relative efficiency can be done by reducing the input or adding the output based on the adjustment value recommended by the analysis results of DEA.
