SEBARAN TERI ASIN KERING TERINDIKASI MENGANDUNG FORMALIN DI PASAR TRADISIONAL KOTA MEDAN

2015 | Skripsi | S1 TEKNOLOGI HASIL PERIKANANPenelitian bertujuan untuk mengetahui sebaran teri terindikasi formalin dan mutu teri di pasar tradisional Kota Medan serta mengetahui tanggapan para pedagang dan Dinas Pertanian dan Kelautan terhadap isu formalin pada teri yang tersebar di kota Medan. Penelitian menggunakan metode purposive sampling teri asin dan populasinya adalah pedagang teri nasi. Sampel yang dipakai berasal dari 57 sampel, diambil dengan teknik purposive sampling dari 15 pasar tradisional yang tersebar di Kota Medan. Selain itu, dilakukan juga wawancara terhadap pedagang dan Dinas Pertanian dan Kelautan. Data yang didapat kemudian dianalisis dengan metode deskriptif kualitatif. Hasil penelitian menunjukkan pengujian, bahwa dari 57 teri asin yang dipakai sampel terdapat 42 sampel positif terindikasi formalin. Mutu teri yang terindikasi formalin yang diuji meliputi: kadar air, protein, TVB, TPC dan pH. Kadar air 48,48%, protein 30,15%, TVB bernilai 83,15%, TPC berkisar 2,5 - 8 CFU/gram serta pH 6,2 sedangkan kualitas teri tidak terindikasi formalin yaitu; kadar air sebesar 47,94%, kadar protein sebesar 30,26%, TVB bernilai 75,76 mg/100g, TPC berkisar 6,00 CFU/gram - 1,50 CFU/gram dan pH bernilai 6,5. Teri terindikasi formalin terbesar merata di 15 pasar. Sebagian besar pedagang bersikap biasa saja terhadap teri terindikasi formalin yang dijual di Pasar. Hal tersebut dikarenakan minimnya pengetahuan tentang peraturan serta informasi tentang bahaya formalin terhadap kesehatan. Penyuluhan dari Dinas juga kurang berperan dalam pemberian informasi.
The aims of this research are to examine the distribution of formaldehyde content and quality of anchovy in the traditional markets of Medan. This research also aims to get responds from some traders and Fishery department based on its formaldehyde contain. This research use purposive method and populations are the traders with their luggage. There were 57 samples taken from 15 tradisional market in Medan using purposive random sampling technique. Beside the sampling method, the research use interview method with traders and Fishery Departement of Medan City officers. The data were analyzed using descriptive qualitative method. The result showed that there are 42 from 75 samples contain formalin. The quality of anchovy fish medan were tested based on their amount of water content, protein content, TVB, TPC, and pH. The result showed that the water content was 48,48 %, the protein was 30,15 %, TVB 83,15 %, TPC was 83,15 %,TPC was 2,5 X 1000, 8 CFU/gram and pH 6,2. The number of samples which content formalin in Medan were spread evenly. Most of the samples contained formalin. Most of the traders accepted the anchovy fish medan without checking its quality. The lack of information about the rule and the bad effect of formalin usage were assumed as the cause of their behavior. The socialisation by Department did not take any role in giving information. The traders did not concern about the issue.
