PENGARUH JENIS DAN TEBAL PLASTIK PENGEMAS TERHADAP UMUR SIMPAN MI KERING MOCAF: STUDI KASUS DI UKM PUTRI 21, PLAYEN-GUNUNG KIDUL

Tujuan penelitian adalah untuk mengetahui pengaruh jenis dan tebal plastik pengemas Polipropilen (PP) dan Polietilen (PE) terhadap kualitas dan umur simpan mi kering mocaf. Untuk kontrol, mi kering mocaf tidak dikemas menggunakan pengemas plastik. Selanjutnya untuk variasi, mi kering mocaf dikemas menggunakan plastik PP dan PE dengan tebal 0,03 mm dan 0,08 mm. Untuk mengetahui pengaruh pengemas plastik terhadap kualitas mi selama penyimpanan, mi kering mocaf disimpan selama 39 hari pada suhu 30oC, RH 75% dan dianalisis kadar air, aw, kerenyahan dan warna setiap 7, 14, 21, 24, 27, 30, 33, 36, dan 39 hari setelah penyimpanan. Umur simpan ditentukan berdasarkan pada metode Isoterm Sorpsi Lembab (ISL). Hasil penelitian menunjukkan bahwa plastik PE 0,08 mm dapat memberikan perlindungan terbaik terhadap kualitas mi kering mocaf. Umur simpan mi kering mocaf yang dikemas menggunakan plastik PE 0,08 adalah ± 13 bulan.

The purpose of this research is to know the effect of kind and thickness of polypropylene (PP) and Polyethylene (PE) plastic packaging on the quality and shelf life of mocaf dried noodle. For control, mocaf dried noodle wasn't packed using plastic packging. For variation, mocaf dried noodle was packed using plastic PP and PE with thickness of 0,03 mm and 0,08 mm. To know the effect of plastic packaging during storage, mocaf dried noodle was stored for 39 days at 30oC, 75 % RH and the moisture content, aw, chripness, and color were analyzed every 7, 14, 21, 24, 27, 30, 33, 36, 39 day after storage. The shelf life was determined using Sorption Isotherm method. The result of this research showed that plastic PE 0,08 mm could give the best protection to quality of mocaf dried noodle than plastic PE 0,03 mm, PP 0,08 mm and PP 0,03 mm. The shelf life of mocaf dried noodle that was packed using plastic PE 0,08 mm is ± 13 months.
