Rumpun Sari Kemuning I merupakan perusahaan yang mengelola daun teh menjadi teh kering yang beralamat di Desa Kemuning Kecamatan Ngargoyoso Kabupaten Karanganyar, Jawa Tengah. Teh hijau hasil olahan dipasok pada perusahaanperusahaan teh wangi. Hubungan adanya identifikasi terhadap unit produksi tentang sanitasi alat dan pekerja membuat hasil produksi teh tetap terjaga kualitasnya. Tujuan tugas akhir ini adalah menganalisa pelaksanaan sanitasi alat dan pekerja di PT. Rumpun Sari Kemuning berdasarkan standart peraturan menteri perindustrian Republik Indonesia Kondisi sanitasi alat dan pekerja di PT. Rumpun Sari Kemuning akan dievaluasi dengan membandingkan dengan Peraturan Menteri Perindustrian Republik Indonesia nomor: 75/M-IND/PER/7/2010, tentang Pedoman Cara Produksi Pangan Olahan yang Baik (Good Manufacturing Practices). Diagram Pareto digunakan untuk mengukur kecacatan atau ketidak sesuaian. Diagram Ishikawa digunakan untuk mengetahui penyebab penyimpangan sanitasi pekerja yang belum memahami pentingnya sanitasi yang tidak dilaksanakan di PT. Rumpun Sari Kemuning. Kesesuaian penerapan sanitasi alat dan pekerja pada PT. Rumpun Sari Kemuning sebesar 62,5% dan tidak sesuai sebesar 37,5%. Hal tersebut membuat PT. Rumpun Sari Kemuning harus memperbaiki ketidaksesuaian pada mesin yang sudah berumur tua dan pemahaman para pekerja akan pelaksanaan kegiatan sanitasi. Pada peralatan dan mesin yang berumur tua lebih diawasi tingkat kebersihanya. Tingkat kesadaran pekerja untuk melakukan kegiatan sanitasi lebih ditingkatkan agar menjadi baik dan sesuai dengan standart untuk menjaga kualitas produk.

Rumpun Sari Kemuning is a company that manages the tea leaves become dry tea which is located in the Village District of Kemuning, Ngargoyoso, Karanganyar, Central Java. Green tea products are supplied in companies of fragrant tea. Relation to the identification of the production units of equipment and workers sanitary making tea production is not adversely affected. Purpose of this final task is to analyze the implementation of equipment and workers sanitary at PT. Rumpun Sari Kemuning based on regulatory standards by industry minister of the Republic of Indonesia. Sanitary condition of equipment and workers at PT. Rumpun Sari Kemuning will be evaluated by comparing with the Regulation of the Industry Minister from the Republic of Indonesia number: 75/M-IND/PER/7/2010, on Guidelines for Good Method of Food Production Processed (Good Manufacturing Practices). Pareto diagrams are used to measure of disability or non-compliance. Ishikawa diagram is used to determine the cause of the deviation of workers sanitation who do not understand importance of sanitation is not implemented in PT. Rumpun Sari Kemuning. Suitability of the application from equipment and workers sanitary at PT. Rumpun Sari Kemuning of 62.5% and 37.5% which do not fit. This makes the PT. Rumpun Sari Kemuning should fix the discrepancy on a machine that already in old age and understanding of the workers at the implementation of sanitation activities. In equipment and machinery that in old age is supervised the hygienist level. Awareness level of workers to conduct sanitation further improved in order to be properly and in accordance with the standards to maintain the quality of the product.
