PENGUKURAN KINERJA PADA ASPEK KONSUMEN (Customer Facing) RANTAI PASOK DAGING AYAM MENGGUNAKAN METODE SUPPLY CHAIN OPERATIONS REFERENCE (SCOR) DAN USULAN PERBAIKANNYA (Studi di Waroeng Spesial Sambal)

2014 | Skripsi | TEKNOLOGI INDUSTRI PERTANIANSupply chain (rantai pasok) merupakan suatu sistem yang mengintegrasikan seluruh proses bisnis mulai dari hulu hingga ke hilir dengan tujuan menyampaikan produk ke konsumen secara tepat waktu dan tepat jumlah tanpa mengesampingkan keuntungan perusahaan. Pengukuran kinerja rantai pasok dilakukan dimana menjadi dasar dikatakannya suatu kegiatan dalam rantai pasok berjalan dengan baik atau tidak. Waroeng Spesial Sambal (WSS) dalam melakukan kegiatan produksi, sering mengalami kendala-kendala, seperti keterlambatan dan inefisiensi sistem produksi yang secara langsung mempengaruhi kinerja rantai pasok daging ayam. Oleh karena itu, pengukuran kinerja sangat diperlukan untuk mengetahui kondisi terkini rantai pasok, serta dapat dilakukan perbaikan apabila terdapat kinerja yang buruk. Objek dalam penelitian ini adalah rantai pasok daging ayam WSS. Pengukuran dan perbaikan kinerja rantai pasok daging ayam WSS dilakukan dengan kombinasi metode Supply Chain Operations Reference (SCOR) dan Value Stream Mapping (VSM). Penelitian ini hanya berfokus pada pengukuran kinerja atribut Customer Facing, yang terdiri dari atribut Reliability, Responsiveness, dan Flexibility. Pengukuran kinerja rantai pasok daging ayam menghasilkan 4 metrik kinerja berada di zona merah (tidak memuaskan), sedangkan metrik kinerja yang diperbaiki yaitu metrik production lead time bernilai (68,7) yang berarti hanya 68,7% lead time produksi yang memenuhi standar waktu penyelesaian, dan metrik supply chain lead time yang bernilai (11 jam). Perbaikan kinerja rantai pasok dapat mengurangi production lead time sebesar 2,2 jam dan mengurangi supply chain lead time menjadi 8,8 jam.
Supply chain is a system that integrated all of business processes from the raw material until finish product to meet customer demand of the product at right time, right place, right quantity and right quality. As a whole structure, supply chain can be separate into a set of entity that have unique functions and objectives. Each of entities that construct supply chain also have a specific form to measure performance as a single entity, but affects supply chain as a whole. Performance measurement can be said as a source of data that contain informations whether supply chain is at good or bad performance, which is very important for improvements at the future. PT. XYZ as the focus industry at this research have many problems that affect directly to supply chain performance and need some improvements. In this research, supply chain performance measurement is focus on chicken meat production line at PT.XYZ. Performance measurement and improvement are done with combination of two methods, Supply Chain Operation Reference (SCOR) as a tool for identification of recent performance in Customer Facing aspects (Reliability, Responsiveness, Flexibility), and Value Stream Mapping as a tool to identify some opportunities for improvements. The results of performance measurement is 11 metrics are identified in the supply chain, with 4 metrics in the red zone (bad performance). From those 11 metrics, production lead time metric and supply chain lead time metric are chosen for taking some improvements. Improvements result are reduction in production lead time and also reduce supply chain lead time for 2,2 hours that hopefully can increase supply chain performance at the future.
