Evaluasi Fisik Kemasan dan Proses Pengemasan Gudeg Wijilan "Bu Lies" Kota Yogyakarta

2014 | Tugas Akhir | D3 AGRO INDUSTRIKemasan kaleng merupakan kemasan yang memiliki ketahanan yang baik terhadap kerusakan fisik maupun mikrobiologis. Supaya produk yang tersimpan pada kemasan kaleng terjaga mutunya, diperlukan pemilihan kemasan kaleng sesuai kebutuhan dan proses pengemasan yang sesuai dengan spesifikasi kemasan tersebut. Maka dari itu diperlukan evaluasi fisik kemasan dan proses pengemasan gudeg di pabrik pengemasan gudeg Wijilan "Bu Lies" yang bertujuan untuk merekomendasikan kemasan kaleng yang sesuai dengan kebutuhan dan proses pengemasan yang baik pada pengemasan gudeg Wijilan "Bu Lies". Evaluasi kemasan kaleng gudeg di gudeg Wijilan "Bu Lies" dilakukan dengan menggunakan pembanding SNI 01-2372.4-2006 Cara uji fisika - Bagian 4: Pemeriksaan kemasan kaleng produk perikanan tahun 2006 dengan metode sampling AQL 6.5 dari CODEX Sampling plans for Prepackaged Foods (AQL 6.5) serta pembahasan hasil uji Komite Akreditasi Nasional (KAN) Agro Based Industry Calibration and Analytical Laboratories (ABICAL) 11350/LHU/Bd/ABICAL.1/XI/2011. Sedangkan evaluasi proses pengemasan pada pengemasan gudeg Wijilan "Bu Lies" dilakukan dengan menggunakan Standard Operating Procedure (SOP) dan penjelasan mengenai proses pengemasan tersebut. Hasil pengujian kemasan kaleng di pengemasan gudeg Wijilan "Bu Lies" pada semua aspek pengujian masing-masing adalah ujikebocoran (0% bocor), pengukuran dimensi fisik (rerata d1=7,23cm, SD=0,01; rerata d2=7,22cm, SD=0,37; rerata t=8,36cm, SD=0,02; rerata V=343,00cm 3 , SD=1,65; rerata Lp=271,73cm 2 , SD=1,00), pemeriksaan fisik (penampakan, seluruh sampel tidak ada kerusakan; bunyi, seluruh sampel tidak nyaring;bagian dalam, seluruh sampel tidak ada kerusakan), dan penentuan head space (rerata 8,71%; SD=2,79). Hasil evaluasi proses pengemasan pada pengemasan gudeg Wijilan "Bu Lies" teridentifikasi terdiri atas 11 lembar SOP yaitu sterilisasi I, pembersihan kaleng, pengisian bahan baku I, pengisian bahan baku II, pengisian bahan baku III, sterilisasi II, penyegelan kaleng, sterilisasi III,pendinginan kaleng, pembersihan dan karantina, dan pelabelan.
Can is a package which had good resistance from physical and microbiological damage. To keep the quality of the product which is stored at can, it is required to choose appropriate type of can and appropriate packaging process with the can specification. From then, it is needed an evaluation of physical of can and gudeg packaging process at gudeg Wijilan "Bu Lies" canning factory that aims to recommend an appropriated type of can and good packaging process at gudeg wijilan "Bu Lies" canning factory. Evaluation of physical of gudeg can at gudeg wijilan "Bu Lies" is conducted with use the document of SNI 01-2372.4-2006 Cara uji fisika – Bagian 4: Pemeriksaan kemasan kaleng produk perikanan tahun 2006 as a comparison with AQL 6.5 sampling method from CODEX Sampling plans for Prepackaged Foods (AQL 6.5) and the discussion of result test from Komite Akteditasi Nasional (KAN) Agro Based Industry Calibration and Analytical Laboratories (ABICAL) 11350/LHU/Bd/ABICAL.1/XI/2011. Whereas the evaluation of packaging process at gudeg Wijilan "Bu Lies" cannery conducted with use of Standard Operating Procedure (SOP) and explanation of the packaging process. The result of test of the can at gudeg Wijilan "Bu Lies" cannery at all test aspect each was the leakage test (0% leaked), physical dimension measurement (average of d1=7,23cm, SD=0,01; average of d2=7,22cm, SD=0,37; average of t=8,36cm, SD=1,00; average of V=343,00cm 3 , SD=1,65; average of Lp=271,73cm 2 , SD=1,00), physical examination (visual, all samples has no damages; sound, all samples has no loud sound; internal section, all samples has no damages), and head space determination (average 8,71%; SD=2,79). The result of evaluation of packaging process at gudeg Wijilan "Bu Lies" cannery has been identified as consisted of 11 pages of SOPs which is sterilization I, can cleaning, filling of raw materials I, filling of raw materials II, filling of raw materials III, sterilization II, can sealing, sterilization III, can cooling, cleaning and quarantine, and labeling.
