Dalam suatu industri pariwisata khususnya dalam bidang perhotelan Purchasing adalah salah satu department yang berperan penting dalam perkembangan hotel tersebut. Purchasing adalah bagian dari department hotel yang bertugas melakukan pembelian barang yang diminta dalam suatu department dalam hotel tak terkecuali Food And Bverage department. Oleh sebab itu perlu adanya analisis prosedur pembelian dan penerimaan barang Food And Baverage. Tujuan analisis ini adalah untuk mengetahui form apa sajakah yang diperlukan, bagian apa sajakah yang terkait dalam proses tersebut, bagaimana prosedur pembelian dan penerimaan barangnya, serta kendala apa saja yang terjadi. Metode yang dilakukan adalah dokumentasi, observasi,serta wawancara. Setalah semua data terkumpul maka selanjutnya akan dianalisis serta dibuatkan bagan yang menjelaskan prosedur pembelian dan penerimaan barang Food And Baverage oleh Purchasing Department. Hasil dari analisis ini menunjukan bahwa prosedur pembelian dan penerimaan barang Food And Baverage berjalan dengan baik dan sesuai dengan prosedur yang sudah ada.

In the tourism industry, especially in the field of hospitality purchasing department is one that plays an important role in the development of the hotel. The method used is documentation, observation, and interviews. After all the data collected will then be analyzed and then made a chart that explains the procedure of purchase and receipt of goods Food And Baverage by the Purchasing Department. The results of this analysis indicate that the procedure of purchase and receipt of goods Food And Baverage running properly and in accordance with existing procedures.
