FORTIFIKASI TEPUNG EUCHEUMA COTTONII DALAM PERMEN LOLLIPOP SEBAGAI SUMBER IODIUM DAN SERAT

Rumput laut mengandung serat dan iodium yang berperanan penting pada kesehatan manusia dan proses pencernaan. Iodium sangat bermanfaat bagi kecerdasan anak serta untuk mencegah gangguan kesehatan akibat kekurangan iodium. Konsumsi serat dapat mencegah diabetes militus, penyakit jantung, dan penyakit lain yang berhubungan dengan obesitas. Permen lollipop merupakan makanan yang disukai anak-anak, umumnya mengandung kalori tinggi tanpa kandungan lain yang bermanfaat. Tujuan penelitian yaitu untuk mengetahui pengaruh penambahan tepung E. cottonii terhadap kandungan serat dan iodium serta mengetahui tingkat penerimaan konsumen. Data yang diperoleh, dianalisis dengan Rancangan Acak Lengkap dilanjutkan dengan uji DMRT. Parameter yang diuji meliputi kadar serat, iodium, gula, air, dan abu serta kesukaan. Penelitian didesain dengan 5 perlakuan yaitu penambahan konsentrasi tepung E.cottonii 0,00%, 0,25%, 0,50%, 0,75%, dan 1,00% serta 1 perlakuan kontrol (permen lollipop komersial). Berdasarkan analisis varian, perlakuan berpengaruh nyata terhadap kadar serat, iodium, air, dan abu pada permen lollipop, sedangkan perlakuan tidak berpengaruh nyata terhadap kadar gula. Uji DMRT menunjukkan bahwa pada umumnya perlakuan saling berbeda nyata, akan tetapi beberapa perlakuan tidak berbeda nyata seperti perlakuan a4 dan a5 pada uji kadar serat. Hasil uji serat kasar, iodium, gula, air, abu berturut-turut pada penambahan E.cottonii sebesar 0,00%, 0,25%, 0,50%, 0,75%, dan 1,00% : 1,55%, 1,94%, 2,25%, 2,44%, 2,24%; 18,98 ppm, 20,21 ppm, 21,03 ppm, 37,86 ppm, 39,21 ppm; 96,41%, 95,72%, 94,5%, 93,57%, 91,93%; 0,017%, 0,56%, 1,03%, 2,87%, 5,23%; 0,08%, 0,10%, 0,11%, 0,11%, 0,13%. Sedangkan uji kesukaan konsumen menunjukkan menurunnya tingkat kesukaan terhadap atribut warna, rasa, tekstur, aroma dan kesukaan secara keseluruhan. Perlakuan terbaik adalah perlakuan a3 dilihat dari respon konsumen, kandungan serat dan iodium sebesar 2,25% dan 21,03 ppm.

Seaweed contains fiber and iodine important role in human health and the digestive process . Iodine is very beneficial for the child's intelligence as well as to prevent health problems caused by iodine deficiency . Consumption of fiber may prevent diabetes mellitus , heart disease , and other diseases associated with obesity . Lollipop is a preferred food of children , generally contain high calories without other useful content . The purpose of this study was to determine the effect of flour E. cottonii the fiber and iodine as well as determine the level of consumer acceptance . The data obtained were analyzed with a completely randomized design followed by DMRT. The parameters tested include fiber content , iodine , sugar , water , and ash as well as joy . The study was designed with five treatments, namely the addition of flour E.cottonii concentration of 0.00 % , 0.25 % , 0.50 % , 0.75 % , and 1.00 % and 1 control treatment ( commercial lollipop ) . Based on the analysis of variance , treatment significantly affected the levels of fiber , iodine , water , and ash on a lollipop , while the treatment did not significantly affect sugar levels . DMRT showed that in general, each treatment was significantly different , but some treatments are not significantly different as a4 and a5 treatment on fiber assay . The test results crude fiber , iodine , sugar , water , ash row on the addition of 0.00 E.cottonii % , 0.25 % , 0.50 % , 0.75 % , and 1.00 % : 1.55 % , 1.94 % , 2.25 % , 2.44 % , 2.24 %, 18.98 ppm , 20.21 ppm , 21.03 ppm , 37.86 ppm , 39.21 ppm, 96.41 % , 95.72 % , 94.5 % , 93.57 % , 91.93 %, 0.017 % , 0.56 % , 1.03 % , 2.87% , 5.23 %, 0.08 % , 0.10 % , 0.11 % , 0.11 % , 0.13 % . While consumer preference test showed a decreased level of preference for the attributes of color, flavor , texture , flavor and overall liking . The best treatment is the treatment a3 views of consumer response , fiber and iodine content of 2.25 % and 21.03 ppm .
