NILAI TAMBAH PRODUK SUSU SEGAR PADA KEDAI SUSU DI DAERAH ISTIMEWA YOGYAKARTA

Penelitian ini bertujuan untuk mengevaluasi nilai tambah dari susu segar dan bahan pelengkapnya dengan berbagai rasa, seperti coklat, stroberi, madu, jahe dan capucino, tape, telur serta pencampuran telurmadu dan telur-madu-jahe. 25 kedai susu dipilih dengan menggunakan metode convenience sampling sebagai responden penelitian. Data biaya produksi, termasuk biaya tenaga kerja dikumpulkan dan dianalisis menggunakan analisis nilai tambah. Harga produk susu segar adalah Rp 4,620, Rp 5.500, Rp 5,560, Rp 5,580, Rp 5,480, Rp 5,580, Rp 6,440, Rp. 6,880, Rp 7,460, Rp 8,200, 5250 Rp, Rp 5.000, masing-masing untuk susu murni, rasa stroberi, coklat, madu, kopi, jahe, madu jahe, telur, telurmadu, telur-madu-jahe, tape dan capucino. Harga rata-rata produk susu segar dan bahan tambahan adalah Rp 1,795,30 per gelas pada volume 325 ml dan Rp 627.57. Rata-rata harga jual produk susu segar adalah Rp 5,962.50, dengan biaya tenaga kerja 727,96 per gelas, rata-rata nilai tambah dari semua produk susu itu Rp 3,242.88 per gelas. Menyimpulkan bahwa keuntungan tertinggi di antara produk susu segar adalah yang ditambahkan oleh telur-madu-jahe, keuntungan terkecil adalah susu segar.

The aim of this study is to evaluate the added value of fresh milk and its supplementation with variety of tastes, such as chocolate, strawberry, honey, ginger, capucino, fermented rice, egg as well as mixing of egg-honey and egg-honey-ginger. 25 milk kiosks were selected using method of convenience sampling as samples for the study. Data of production cost, including cost of labour were collected and analyzed using analyze of added value. The supplemented milk products price were IDR 4,620, IDR 5,500, IDR 5,560, IDR 5,580, IDR 5,480, IDR 5,580, IDR 6,440, IDR 6,880, IDR 7,460, IDR 8,200, IDR 5,250, IDR 5,000 for fresh milk,each for taste of strawberry, chocolete, honey, coffe, ginger, honeyginger, egg, egg-honey,egg-honey-ginger, fermented rice, and capucino respectively.The average price of fresh milk and its supplementation was IDR 1,795,30 per glass at the volume of 325 ml and IDR 627.57. Selling price of milk supplemented products were IDR 5,962.50 in average, with labour cost of 727,96 per glass, therefore average of added value of all milk products was IDR 3,242.88 per glass. It concluded that the highest profit among those product was fresh milk added by egg-honey-ginger, but the lowest profit was fresh milk.
