PENERAPAN PENGENDALIAN SANITASI PADA PERALATAN PRODUKSI NATA DE COCO DI PT.TROPICA NUCIFERA INDUSTRY

Sanitasi merupakan kegiatan atau proses yang dilakukan pada suatu industri dalam perlakuannya yang kontak dengan bahan pangan dengan menggunakan solusi sanitasi untuk membunuh atau mengurangi mikroorganisme yang merugikan (tidak digunakan pada proses produksi) jumlahnya sampai pada level yang dapat diterima. PT. Tropica Nucifera Industry telah menerapkan sanitasi namun terdapat beberapa yang menyimpang dari standar sanitasi sehingga perlu dilakukan perbaikan. PT. Tropica Nucifera Industry merupakan industri yang bergerak di bidang pengolahan produk berbahan baku kelapa, dan salah satu produknya adalah Nata de coco. Nata de coco adalah Bacterial cellulosa atau selulosa sintetis yang merupakan hasil sintesa dari gula oleh bakteri pembentuk nata yaitu Acetobacter xylinum. Berdasarkan hasil evaluasi Penerapan sanitasi pada peralatan produksi Nata de Coco yang dilakukan di PT. Tropica Nucifera Industry peralatan 81,25% telah sesuai Peraturan Kepala Badan Pengawas Obat dan Makanan No. HK. 03.1.23.04.12.2206 tahun 2012 tentang cara produksi pangan yang baik untuk industri rumah tangga.

Sanitation is a process or activity which is done in certain industry in term of the food stuffs treatment by using sanitation solutions to kill or reduce the amount of harmful microorganisms (which are not used during production process) into an acceptable level. Tropica Nucifera Industry Ltd. has applied sanitation. Since there are some procedures which are irrelevant to the standard sanitation, an improvement is needed. Tropica Nucifera Industry Ltd. is a manufacturing company which processes coconut. One of its products is Nata de Coco. Nata de Coco is Bacterial cellulose or synthetic cellulose, the synthesizing result of sugar done by bacterial called Acetobacter xylinum. The evaluation towards the applied sanitation procedures on Nata de Coco production tools used by Tropica Nucifera Industry Ltd. shows that 81.25% of them have conformed the instruction from Indonesian Supervisory Board of Food and Drug (BPOM) number HK. 03.1.23.04.12.2206 in 2012, about the good food manufacturing for home industry.
