ANALISIS DAN EVALUASI MUTU PASCAPANENRUMPUT LAUT Eucheuma cottoniiDI KABUPATEN BUTON PROVINSI SULAWESI TENGGARA

Rumput laut merupakan salah satu komoditas unggulan provinsi Sulawesi Tenggara yang cukup potensial namun jaminan kualitas masih rendah. Penelitian ini bertujuan untuk memperoleh gambaran penanganan mutu pascapanen rumput laut Eucheuma cottonii di kabupaten Buton propinsi Sulawesi Tenggara, menganalis dan mengevaluasi mutu pascapanen dan memberikan gambaran penanganan pascapanen yang tepat. Penelitian dilakukan dengan menggunakan metode survey kemudian dianalisis secara deskriptif dan kuantitatif. Pemilihan responden secara purposive sampling dan snow ball sampling. Data dianalisis berdasarkan Standar Nasional Indonesia (SNI) : SNI 2690.1:2009 (Rumput laut Kering_Bagian 1 : Spesifikasi), SNI 2690.2:2009 (Rumput Laut Kering_Bagian 2 : Persyaratan Bahan Baku), SNI 2690.3:2009 (Rumput laut Kering_Bagian 3 : Penanganan dan Pengolahan) dan standar industri pengolahan. Hasil penelitian ditinjau dari penanganan dan pengolahan pascapanen terhadap perbaikan mutu ditingkat petani, pedagang pengumpul, pedagang besar dan prosesor masih kurang diperhatikan dari prosedur penggunaan bahan penolong, peralatan, penimbangan, pengemasan, pelabelan dan penyimpanan (penggudangan). Metode pengeringan sudah sesuai SNI. Dari persyaratan bahan baku meliputi jenis, bentuk dan asal lokasi budidaya sudah sesuai SNI. Ditinjau dari syarat mutu dan keamanan pangan maka dari aspek analisa sensori, kadar benda asing, kadar Salt dan Sand (SS), kadar Sand Determination (SD) dari 6 lokasi sudah sesuai SNI dan standar industri pengolahan, sedangkan kadar air hanya 1 lokasi (34,89%) dan kadar Salt Free Dry Matter (SFDM) 4 lokasi (34,89-41,56%) yang sesuai SNI dan standar industri pengolahan. Penanganan mutu rumput yang sesuai SNI akan memberikan dampak beberapa perbaikan mutu disamping adanya sertifikasi SNI. Kata Kunci

Seaweed is one of the top commodities which is potentially developed but still low quality assurance in Southeast Sulawesi province. The aim of the research were to obtain the method of post harvest handling quality Eucheuma cottonii seaweed in Buton regency, to analyze and to evaluate post harvest quality and to provide an overview of proper post harvest handling. The method which used in the research was a survey method then analyzed in descriptive and quantitative. Respondents were selected by purposive and snow ball sampling. Data analyzed based on Indonesia Nasional Standard (SNI) : SNI 2690.1: 2009 (Dried seeweeds_section 1: Specifications), SNI 2690.2: 2009 (Dried seeweeds _section 2: Requirements of raw material), SNI 2690.3: 2009 (Dried seeweeds _section 3: Handling and processing) and the industry standard processing. The results shown that post harvest handling and processing on improvement quality in farmers, collectors, wholesaler and processor still less of awareness of using additional material, equipments, weighing, packaging, labeling and storage procedure. Drying methods have appropriated SNI. Raw material requirements included the type, shape and cultivate location have appropriated SNI. Based on quality requirements and food safety in sensory analysis, content of foreign materials, Salt and Sand (SS), Sand Determination (SD) in six locations have appropriated SNI and industry standard processing, moisture content only one location (34,89%) and Salt Free Dry Matter (SFDM) at four locations (41,56- 34,89%) appropriated SNI and industry standard processing. Handling quality of seaweeds appropriate to SNI would give the impact to some improvements quality and the SNI certification.
