PENGGUNAAN TONGKOL JAGUNG DALAM COMPLETE FEED DAN UNDEGRADED PROTEIN TERHADAP KONSUMSI NUTRIEN, PERTAMBAHAN BOBOT BADAN, DAN KUALITAS DAGING SAPI PERANAKAN ONGOLE

2011 | Tesis | S2 Ilmu PeternakanPenelitian ini bertujuan untuk mengetahui konsumsi pakan, pertambahan bobot badan, persentase karkas dan kualitas daging pada sapi Peranakan Ongole (PO) yang diberi complete feed berbahan dasar tongkol jagung dan suplementasi undegraded protein. Dua belas ekor sapi jantan berumur antara 1,5-2,0 tahun dengan berat badan rata-rata 268,5 kg dibagi secara acak menjadi 3 kelompok dengan ulangan 4 ekor. Perlakuan I merupakan ransum dengan pakan basal rumput gajah dan konsentrat BC Feed (R-1), perlakuan II merupakan pelet pakan komplit berbahan dasar tongkol jagung (R-2), dan perlakuan III merupakan pelet pakan komplit yang disuplementasi undegraded protein (R-3). Air minum diberikan secara ad libitum. Pada akhir penelitian 3 ekor dari masing-masing kelompok dipotong untuk diketahui persentase karkas, kualitas fisik (pH, warna, daya ikat air (DIA), susut masak, dan keempukan), dan kimia daging (kadar air, protein, dan lemak). Semua data yang diperoleh dilakukan uji analisis statistik dengan rancangan acak lengkap pola searah dan bila terdapat perbedaan yang nyata dilanjutkan dengan uji Duncans multiple range test (DMRT). Penggunaan suplementasi UDP berpengaruh secara nyata pada konsumsi nutrien dan pertambahan bobot badan harian (PBBH), tapi pada feed conversion ratio (FCR), dan persentase karkas menunjukkan perbedaan yang tidak nyata. Kualitas fisik daging menunjukkan bahwa pH berbeda nyata antara R-1 dengan R-2 maupun R-3 (5,32; 5,66; dan 5,65), warna berbeda sangat nyata (P<0,01) antara ketiga perlakuan (5,7; 7,2; dan 7,5), DIA (16,05%; 25,39%; dan 22,75%) berbeda nyata antara R-1 dengan R-2 dan R-3. Dari penelitian ini dapat disimpulkan bahwa penggunaan complete feed dan undegraded protein mampu meningkatkan konsumsi nutrien, PBBH, dan daya ikat air daging pada sapi PO.
This research was conducted to determine nutrient intake, average daily gain, feed convertion ratio, carcass percentage, and meat quality of Ongole Crossbred (OC) cattle given corn cobs as basal diet in complete feed and undegraded protein supplementation. Twelve male cattle of approximately 1.5-2.0 years old with the average liveweight of 268.5 kg were randomly devided into three groups with four replications, respectively. The first treatment was fed diets with elephant grass as basal diet and BC Feed concentrate (R-1), the second treatment was pellet complete feed with corn cobs as basal diet (R-2), and the third treatment was pellet complete feed added with undegraded protein (R-3). The drinking water was offered ad libitum. At the end of experiment, three head of cattle per group were slaughtered for the evaluation of carcass percentage, the meat chemical composition (water content, protein, and fat content), and the meat physical quality (colour, pH, water-holding capacity, cooking loss, and meat tenderness). The data were analyzed from the Completely Randomized Design by a one-way classification of analysis of variance. The differences between means were tested by Duncan’s Multiple Range Test (DMRT). The average daily gain (ADG), feed convertion ratio (FCR), and carcass percentage did not differ significantly. The meat physical quality of pH for R- 1 was lower (P<0.05) than for R-2 and for R-3 (5.32, 5.66, and 5.65), the colour of meat was significantly different (P<0.01) between groups (5.7, 7.2, and 8.0). The water-holding capacity (16.05%, 25.39%, and 22.75%), for R-1, R-2 and R-3 was significantly different (P<0.05). It could be concluded that complete feed and supplementation of undegraded protein improved the nutrient consumption, ADG, and water-holding capacity on OC cattle.
