This crop is used to be served in various product types based on its variety processing. Here, the research is aimed to explore the role of small scale enterprise of food producers in supporting diversification product of food using cassava material. The survey was constructed by disseminating a questionnaire to 36 respondents, including members of small scale enterprise of processed food, combined with a depth interview with directors and staffs of enterprise. The degree of small scale enterprise influence on diversification of food product of cassava is indicated by the improvement of human resource, material supply, market opportunity, investment, information access, and productivity. Data analysis was based on descriptive and graphical analysis, supported by a regression. The result shows that the intensity of industrial resources utilization experienced a trend from 2005 to 2007 as ion average recorded amount of 67%, 33%, 9%, and 76%, for material using, invesUbi kayu merupakan salah satu sumber bahan pangan lokal yang potensial di Kabupaten Pacitan yang dapat ditingkatkan nilai manfaatnya dengan melalui proses pengolahan menjadi beranekaragam produk pangan olahan yang memiliki nilai mutu produk yang tinggi. Upaya penganekaragaman atau diversifikasi pangan olahan berbasis ubi kayu dapat dilakukan melalui pendekatan kelompok yaitu melalui kelompok industri pangan olahan. Penelitian ini menggunakan survei lapangan dengan kuesioner kepada 36 responden yaitu anggota, dan pengurus serta petugas pendamping kelompok pangan olahan. Survey ini dilakukan untuk mengetahui peran kelompok dalam hal ini dilihat dari peran dalam peningkatan sumberdaya manusia, penyedian bahan baku, pasar, penyediaan modal, penyediaan peralatan, dan informasi terhadap diversifikasi pangan olahan berbasis ubi kayu serta mengetahui intensitas penggunaan sumberdaya industri dan perkembangan volume produksi. Analisis data dilakukan dengan menggunakan metode analisis diskriptif dan grafis, analisis regresi linier berganda dan uji- t serta uji-F. Berdasarkan hasil penelitian diketahui bahwa intensitas penggunaan sumberdaya industri dalam diversifikasi pangan olahan ubi kayu mengalami kenaikan selama tahun 2004 – 2007 rata-rata per tahun sebesar 66,88 % untuk bahan baku, 33,43 % untuk modal dan asset, 8,66 % untuk tenaga kerja, dan produksi 75,67 % per tahun. Sedangkan diversifikasi pangan olahan berbasis ubi kayu mengalami perkembangan tetapi belum optimal, tingkat perkembangan rata-rata 33,33 % per tahun. Adapun penyerapan produksi masing-masing jenis produk di pasaran mengalami peningkatan, rata-rata per tahun untuk kripik sermiyer sebesar 61,34 %, kolong, 57,92 %, kripik manggleng 33,33 %, teraga 16,60 %, dan krecek 15,20 %. Dengan metode analisis regresi linier berganda diketahui bahwa peran kelompok industri pangan olahan berpengaruh terhadap diversifikasi pangan berbasis ubi kayu sebesar 84,02 %. Dengan demikian maka kegiatan diversifikasi pangan olahan berbasis ubi kayu dapat dikembangkan dengan melalui peningkatan peran kelompok industri pangan olahan.tment, recruitment, and production volume, respectively. And based on the regression, it shows that the role of small scale enterprise in supporting diversification of cassava product is significant, that the independent variables able to determined 84% variation occurred on diversification as the dependent variable. This means that the diversification of cassava product can be developed by strengthening the role of small scale enterprise of processed food.
