Tomat ceri membutuhkan penyimpanan
a* dan ?E) selama penyimpanan. Peningkatan suhu
menurunkan susut bobot.
Optimal storage
is required for cherry tomatoes to control respiration rate and prevent
physical quality deterioration. Conventional respiration rate measurement using
a gas analyzer or gas chromatography has limitations, as it can cause partial
pressure changes in the system and requires careful selection of measurement
intervals to capture the dynamic nature of the respiration process. The use of
sensors is more advantageous because it enables continuous gas composition
measurement without affecting the system.
In this study, a factorial design was employed with
temperature variations of 2?, 7?, 13?, and 27? (± 3?) and RH variations of
ambient and 85–90% (achieved using KCl). Respiration rate and physical quality
changes of cherry tomatoes were measured across the eight treatment
combinations.
A respiration monitoring device for cherry tomatoes was
developed using an MQ135 sensor to measure CO2 and a BMP180 sensor
to estimate O2. However, the device was unable to detect changes in
CO2 and O2 concentrations inside the container. Using the
data obtained from gas analyzer, the highest CO2 production and O2
consumption were observed in the DT (27°C) treatment combination, with values
of 27.561 ml/kg.h and 19.293 ml/kg.h, respectively. Gas concentration data were
modelled, with the polynomial model found to be the best fit for CO2
and the exponential model for O2 based on lower AIC values. Based on
the k constant derived from exponential model for O2, the lowest
rate of O2 consumption was observed in the AT (13°C) treatment,
while the highest was in the DK (27°C + KCl) treatment. Modelling using the
Arrhenius equation to investigate temperature dependence showed poor fit (R2
= 0.0818 without KCl and R2 = 0.6818 with KCl), attributed to
deviation at 13°C. For physical quality assessment, general trends during
storage included increased weight loss, decreased texture, and color changes
(decreased L*, C*, and h°; increased a* and ?E). The results indicate that
increasing temperature accelerates respiration rate and physical quality
deterioration (weight loss, texture, and color change) of cherry tomatoes. Meanwhile,
the use of KCl only had a significant effect on respiration rate and weight
loss. Based on the obtained results, it is recommended to store cherry tomatoes
at cold temperatures (2°C, 7°C, and 13°C) with or without KCl application to
delay respiration rate and reduce weight loss.
