The development of biomass-based bioplastics has continued to grow as a sustainable alternative material for packaging applications. One of the most widely utilized raw materials is cassava starch due to its abundant availability, low cost, and ease of processing. However, cassava starch-based bioplastics still exhibit poor mechanical properties and high sensitivity to water. One approach to improve their characteristics is the addition of cellulose as a reinforcing agent. This study aims to determine the best NaOH concentration in the delignification process, analyze the effects of robusta coffee silverskin extract and glycerol concentrations on bioplastic characteristics, and determine the optimum bioplastic formulation using Response Surface Methodology (RSM) with a Central Composite Design (CCD). The responses observed were tensile strength, elongation, young’s modulus, water absorption, and thickness. Cellulose was obtained through delignification using NaOH and bleaching using H2O2. The result showed that a NaOH concentration of 15% produced the highest cellulose content of 53,63%. Increasing the concentration of robusta coffee silverskin extract tended to increase tensile strength, young’s modulus, and thickness, while decreasing elongation and water absorption. In contrast, increasing glycerol concentration decreased tensile strength and young’s modulus, but increased elongation, water absorption, and thickness. The optimum condition was achieved at 25,83% robusta coffee silver skin extract and 20% glycerol, with a desirability value of 0,778. Validation result showed a tensile strength of 11,75±0,74 MPa, elongation of 3,34±0,52%, young’s modulus of 143,23±52,26 MPa, water absorption of 33,52±0,45%, and thickness of 0,12±0,001 mm.
