Manual classification of citrus (jeruk keprok) ripeness levels is prone to subjectivity and inconsistent assessment results. This issue is further compounded by the non-uniform distribution of skin color across the fruit’s surface, which means that using a single color sensor is likely to produce classification errors due to limited observation coverage (blind spot). This research aims to design and implement a multi-sensor-based ripeness classification system for citrus fruit using six TCS34725 color sensors mounted around the fruit, an ESP32 microcontroller, and the Mamdani Fuzzy Logic method. A two-stage Fuzzy Voting method is proposed: in the first stage, RGB data from each sensor is processed using Mamdani fuzzy inference to produce a classification at each observation point; in the second stage, the six classification results are combined through a Fuzzy Voting mechanism to determine the fruit’s overall final ripeness class. This approach allows the system to account for color variation across different sides of the fruit, resulting in a more robust classification decision compared to using a single sensor.

All measurement data and classification results are displayed through a real-time web-based dashboard to facilitate system monitoring. Testing was conducted on 55 citrus fruit samples and achieved a classification accuracy of 94.54%. These results indicate that the integration of multi-sensor color detection, the Mamdani Fuzzy method, the two-stage Fuzzy Voting mechanism, and a real-time monitoring system can improve the objectivity and effectiveness of the citrus ripeness classification process compared to conventional visual-based methods.
