In this study, a polyvinyl alcohol (PVA)/starch-anthocyanin-TiO2 (PPAT) composite film was prepared as an intelligent packaging material for shrimp freshness detection. Anthocyanins extracted from red cabbage were utilized as a pH indicator capable of exhibiting colorimetric responses to pH increases caused by the formation of volatile basic nitrogen compounds during shrimp spoilage. TiO2 nanoparticles were incorporated to improve the physical, mechanical, and optical properties of the film as well as to provide antibacterial activity. Optimization was performed by varying the PVA mass ratio (4:0, 3:1, 2:2, 1:3, and 0:4) and the amount of TiO2 nanoparticles added (5%, 10%, and 15% of the total polymer mass) to obtain the composite film formulation with optimum characteristics.
The results showed that the composite film with a PVA ratio of 2:2 exhibited good elasticity and moderate swelling of 52.9%. The formation of ester groups confirmed the occurrence of crosslinking within the polymer matrix. SEM-EDX analysis demonstrated that TiO2 nanoparticles were successfully incorporated into the matrix. The addition of TiO2 nanoparticles improved the water resistance, tensile strength, and inhibition zone diameters against both Gram-positive and Gram-negative bacteria. These findings indicate that TiO2 nanoparticles play an important role in improving and expanding the functionality of intelligent packaging.
The PPAT composite film exhibited a distinct colorimetric response to pH changes and ammonia vapor by changing color from purplish pink to bluish green. The total color difference of the PPAT composite film in response to ammonia vapor ranged from 38.9 to 53.3, with a limit of detection (LOD) of 403-685 ppm and a limit of quantification (LOQ) of 1220-2070 ppm. In the application for shrimp freshness detection, the composite film exhibited ?E values ranging from 47.9 to 64.4, which correlated with TVB-N and pH values during spoilage. A purplish PPAT composite film indicated fresh shrimp, a bluish composite film indicated that the shrimp should be processed immediately, whereas a greenish composite film indicated spoiled shrimp.
