Kopi robusta mengalami penurunan tren produksi selama hampir 1 dekade terakhir.
Robusta coffee production has been on a downward trend for almost the past decade. Its aroma and flavour profile, believed to stem from volatile compounds such as phenols and pyrazines, is responsible for its bitter taste and aftertaste, making it less popular. Fermentation with Symbiotic Culture of Bacteria and Yeast (SCOBY) in kombucha is known to change the component structure of coffee and improve the content of bioactive compounds. In addition, the flavoring process with snake fruit is often used to in kombucha product to add the nutritional reserves for fermented microbes yet enriched sensory profile. This research evaluates the innovative product of robusta kombucha coffee with or without addtion of snake fruit for about 7 days fermentation towards physicochemical characteristic, microbiology, and antioxidant activities with the kombucha tea as a comparison. The main parameters tested covering sensory analysis, pH value, the total acidity, the total of microbes through total plate count (TPC), identification of volatile compounds with HS-SPME GC-MS, and antioxidant DPPH test. The results show that kombucha coffee without snake fruit has the most popular level of preference with overall acceptance score of 4.1, pH value of 3,82 ± 0,06, and the total of acetic acid 0.270 ± 0.004% with significant value p = 0,0007 statistically. The total microbes of kombucha coffee entirely 8,61 Log10 CFU/ml showing a qualified criteria as a probiotic beverage and 8,90* Log10 CFU/ml for The Enterobacteriaceae in total. A total of 43 volatile compounds were identified, including 2-furanmethanol, which is characteristic of the smoky aroma, and 4-ethyl-2-methoxy-phenol, a phenolic compound that plays a role in the formation of the aroma and flavour of coffee. Antioxidant activity tests draw significant differences for every sample starting from 0 day and 7 day (p < 0>
