Tomat ceri (Solanum lycopersicum var. cerasiforme) merupakan komoditas hortikultura yang mudah rusak dan memiliki umur simpan pendek sehingga kualitasnya cepat menurun selama penyimpanan. Penurunan ini dipengaruhi oleh penanganan pascapanen seperti tingkat kematangan saat panen, jenis kemasan, dan suhu penyimpanan yang belum optimal. Oleh karena itu, penelitian ini bertujuan untuk menganalisis pengaruh faktor-faktor tersebut terhadap kualitas fisikokimia tomat ceri dan mengevaluasi kontribusi masing-masing faktor menggunakan Grey Relational Grade (GRG) untuk optimasi mutu, serta merumuskan kombinasi terbaik untuk menghasilkan mutu tomat ceri dengan kombinasi faktor dan level optimal.
Penentuan kombinasi terbaik menggunakan pendekatan Taguchi yang dikombinasikan dengan Grey Relational Analysis (GRA) untuk menentukan kondisi optimal berdasarkan beberapa respon. Eksperimen berbasis Orthogonal Array (OA) jenis L9 (3^3), perhitungan efek means, Signal to Noise Ratio (SNR), dan perhitungan ANOVA. Kemudian, GRA dilakukan dengan normalisasi data dan perhitungan Grey Relational Coefficient (GRC) serta Grey Relational Grade (GRG) untuk mengintegrasikan seluruh respon menjadi satu nilai sehingga diperoleh kombinasi perlakuan terbaik. Hasil optimasi kemudian divalidasi melalui uji konfirmasi dengan membandingkan nilai prediksi dan hasil aktual.
Tingkat kematangan, jenis kemasan, dan suhu penyimpanan memengaruhi kualitas tomat ceri selama penyimpanan dengan respons yang berbeda pada setiap parameter fisikokimia. Pengaruh tersebut lebih dominan pada total padatan terlarut, susut bobot, dan warna, sedangkan kadar air dan kekerasan relatif tidak signifikan. Kombinasi perlakuan terbaik diperoleh pada tingkat kematangan light red, kemasan PET trays, dan suhu penyimpanan rendah (4±2 °C) dengan nilai Grey Relational Grade (GRG) tertinggi sebesar 0.644 yang menunjukkan kinerja optimal dan termasuk kategori tinggi, serta hasil uji konfirmasi menunjukkan respons fisikokimia yang saling tumpang tindih sehingga kombinasi tersebut valid untuk direkomendasikan.
Cherry tomatoes (Solanum lycopersicum var. cerasiforme) are highly perishable horticultural commodities with a short shelf life, leading to rapid quality degradation during storage. This decline is influenced by post-harvest handling factors specifically maturity stage at harvest, packaging type, and storage temperature which have not yet been optimized. Therefore, this study aims to analyze the influence of these factors on the physicochemical quality of cherry tomatoes, evaluate the contribution of each factor using Grey Relational Grade (GRG) for quality optimization, and formulate the optimal combination of factors and levels to achieve superior quality.
Determining the best combination involved using the Taguchi method integrated with Grey Relational Analysis (GRA) to identify optimal conditions across multiple responses. The experiment was based on an L9 (3^3), Orthogonal Array (OA), incorporating the calculation of means effects, Signal-to-Noise Ratio (SNR), and ANOVA. Subsequently, GRA was performed through data normalization and the calculation of the Grey Relational Coefficient (GRC) and Grey Relational Grade (GRG) to integrate all responses into a single representative value. The optimization results were then validated through confirmation tests comparing predicted values with actual experimental results.
The results indicate that maturity stage, packaging type, and storage temperature significantly affect cherry tomato quality during storage, with varying responses across physicochemical parameters. These factors exerted a dominant influence on total soluble solids, weight loss, and color, while moisture content and firmness were relatively insignificant. The optimal treatment combination was identified as the light red maturity stage, PET tray packaging, and low storage temperature (4±2 °C), yielding the highest Grey Relational Grade (GRG) of 0.644, indicating optimal performance and a high-category classification. Confirmation tests demonstrated overlapping physicochemical responses, validating this combination for recommended use.
