Red chilli pepper is one of the most widely cultivated plants in Indonesia. Its availability demand also increases every year, but it is limited by its short shelf life. To prolong its shelf life can applied a CAS technology. CAS application in the storage field requires information about the physiological response of red chilli pepper to O2 concentration. This research aims to analyze the physiological response of red chilli pepper to O2 concentration through Michaelis-Menten modeling. This research method was carried out by varying the CO2 concentration (3% & 10%) and temperature (7oC & 25oC). Respiration measurement were carried out using the dynamic closed depletion system method. The data colletion for respiration is O2 and CO2 concentrations. Determination of the best model type is based on curve fitting. The results show that the best model is noncompetitive. In addition, the elevation CO2, reduction O2, and lowering temperature can reduce O2 consumpton, CO2 production, ethanol production, and ethylene production. Storage of red chilli pepper may able in condition 7oC with ±10% CO2.
