Manajemen Produksi dan Kinerja Usaha Gula Kelapa di Kapanewon Kokap Kabupaten Kulon Progo

Penelitian ini bertujuan untuk 1) mengkaji kinerja usaha gula kelapa dan 2) mengkaji pengaruh manajemen produksi terhadap kinerja usaha gula kelapa di Kapanewon Kokap Kabupaten Kulon Progo. Metode dasar penelitian yaitu analisis deskriptif. Penelitian dilakukan di bulan Agustus hingga Oktober 2024 di Desa Hargorejo dan Desa Hargowilis Kapanewon Kokap. Metode sampling yaitu non-probability sampling, dengan pemilihan lokasi secara purposive dan pengumpulan sampel secara snowball sampling sejumlah 110 responden dengan kriteria daerah merupakan sentra gula kelapa dan responden merupakan petani sekaligus pengrajin yang masih aktif melakukan usaha gula kelapa cetak selama masa penelitian berlangsung. Variabel uji dalam penelitian ini yaitu penanganan bahan baku (12 indikator), proses pengolahan (14 indikator) dan kinerja usaha (7 indikator). Skala pengukuran yang digunakan yaitu skala likert untuk variabel penanganan bahan baku dan proses pengolahan, serta skala rasio untuk variabel kinerja usaha. Metode analisis data menggunakan perhitungan indikator kinerja usaha dan SEM-PLS. Berdasarkan hasil penelitian tujuan pertama yaitu usaha gula kelapa yang dilakukan tidak menguntungkan. Berdasarkan hasil penelitian tujuan kedua menunjukkan bahwa terdapat pengaruh positif penanganan bahan baku terhadap kinerja usaha gula kelapa sebesar 0,411 satuan; serta terdapat pengaruh positif proses pengolahan terhadap kinerja usaha gula kelapa sebesar 0,470 satuan.


This study aims to 1) examine the performance of the coconut sugar business and 2) examine the influence of production management on the performance of the coconut sugar business in Kokap Sub-District, Kulon Progo Regency. The basic method of research is descriptive analysis. The research was conducted from August to October 2024 in Hargorejo Village and Hargowilis Village, Kokap Sub-District. The sampling method is non-probability sampling, with purposive location selection and snowball sampling of 110 respondents with the criteria that the area is a coconut sugar center and the respondents are farmers and craftsmen who are still actively running a coconut palm sugar business during the research period. The tested variables in this study are the handling of raw materials (12 indicators), the processing process (14 indicators) and business performance (7 indicators). The measurement scale used is the likert scale for the variables of handling raw materials and processing processes, as well as the ratio scale for the business performance variable. The data analysis method uses the calculation of business performance indicators and SEM-PLS. Based on the results of the research, the first goal is that the coconut palm sugar business carried out is not profitable. Based on the results of the second objective research, it shows that there is a positive influence of raw material handling on the performance of the coconut sugar business by 0.411 units; and there is a positive influence of the processing process on the performance of the coconut sugar business by 0.470 units.
