VARIABEL-VARIABEL PENDUGA HASIL DAGING DARI KARKAS SEGAR SAPI SIMPO DAN LIMPO JANTAN

Penelitian ini bertujuan untuk mengetahui hubungan antara variabelvariabel penduga hasil daging (carcass cutability) dari karkas segar sapi Simmental Peranakan Ongole (SimPO) dan Limousin Peranakan Ongole (LimPO) jantan. Sapi yang digunakan sebanyak 83 ekor sapi jantan, terdiri atas 51 ekor sapi SimPO dan 32 ekor sapi LimPO dengan skor kondisi tubuh (SKT) 3 sampai 4. Data yang diambil meliputi umur, bobot potong, bobot karkas (X1), tebal lemak punggung (X2), luas area mata rusuk (X3), persentase lemak KPH dari bobot karkas (X4), dan bobot daging (hasil daging). Data dianalisis dengan menggunakan metode Independent Sample T-test, korelasi Pearson 2-tailed, regresi sederhana dan berganda metode enter dan stepwise, dan kurva estimasi. Umur, bobot potong, bobot karkas, tebal lemak punggung, luas area mata rusuk, persentase lemak KPH, dan bobot daging sapi SimPO dan LimPO jantan tidak berbeda nyata. Bobot karkas, tebal lemak punggung, luas area mata rusuk, dan hasil daging mempunyai korelasi yang nyata dan positif (P<0,05), sedangkan persentase lemak KPH mempunyai korelasi positif pada sapi SimPO dan negatif pada sapi LimPO. Persamaan regresi dan koefisien determinasi sapi SimPO secara berturut-turut adalah Y=- 24,726+0,916X1 dan R2 =0,948, sapi LimPO yaitu Y=-29,729+0,934X1 dan R2 =0,995, dan sapi secara keseluruhan Y=-25,586+0,919X1 dan R2 =0,956. Berdasarkan hasil penelitian dapat disimpulkan bahwa terdapat korelasi yang nyata antara bobot karkas, tebal lemak punggung, luas area mata rusuk, dan hasil daging pada karkas segar sapi SimPO dan LimPO jantan. Persamaan regresi yang paling tepat menggunakan variabel bobot karkas. Bentuk kurva dari hubungan antara bobot karkas dengan hasil daging pada sapi SimPO jantan dan sapi secara keseluruhan adalah linier, kuadratik, dan kubik, sedangkan bentuk kurva pada sapi LimPO jantan adalah kuadratik dan kubik. This research was conducted to observe the relationship among variables for carcass cutability estimation in hot carcass of SimPO and LimPO cattle. Eighty three beef cattle were used in this research, consisting of 51 Simmental Grade (SimPO) cattle and 32 Limousin Grade (LimPO) cattle with 3 to 4 body condition score (BCS). The data collected included age, body weight, carcass weight (X1), fat thickness (X2), rib eye area (X3), percentage of kidney, pelvic, and heart fat (X4), and carcass cutability. The data was analyzed by using Independent Sample T-test, 2- tailed Pearson correlation, regression analysis by enter and stepwise method, and estimation curve. There was no difference of age, body weight, carcass weight, fat thickness, rib eye area, percentage of kidney, pelvic, and heart fat, and carcass cutability among SimPO and LimPO cattle. There was a strong and positive correlation between the carcass weight, fat thickness, rib eye area, and carcass cutability (P<0,05), and there was a positive correlation of percentage of kidney, pelvic, and heart fat in SimPO and negative correlation in LimPO. The result of regression analysis and determination coefficient of SimPO carcass cutability variables was Y=-24,726+0,916X1 and R2 =0,948, LimPO carcass cutabilities variables was Y=-29,729+0,934X1 and R2 =0,995, and all of SimPO and LimPO beef cattle was Y=-25,586+0,919X1 and R2 =0,956, respectively based on research result, it could concluded that there was a significant and positive correlation between the carcass weight, fat thickness, rib eye area, and carcass cutability of SimPO and LimPO cattle. Carcass weight was the only one variable which was in the regression analysis. Carcass weight and carcass cutability of SimPO and all breed grups had a linear, quadratic, and cubic positive curve models, and the curve models of LimPO were quadratic and qubic.
