PENGARUH BOBOT POTONG TERHADAP PERSENTASE KARKAS DAN NON KARKAS KERBAU JANTAN DI RUMAH POTONG HEWAN KABUPATEN KUDUS

2015 | Skripsi | S1 PETERNAKANPenelitian ini bertujuan untuk mengetahui pengaruh bobot potong terhadap persentase karkas dan non karkas di Rumah Potong Hewan Kabupaten Kudus. Materi penelitian sebanyak 80 ekor kerbau jantan dengan pengelompokan bobot potong 290-375 kg dan 376-460 kg. Data yang digunakan yaitu bobot karkas, persentase karkas dan non karkas (kepala, kaki, kulit, hati, paru-paru, jantung, saluran pencernaan, dan ginjal). Berdasarkan penelitian didapatkan hasil untuk kelompok dengan bobot potong 290-375 kg memiliki persentase karkas49,64±0,474%, persentase kepala 2,48±0,297%, persentase kulit 4,07±0,418%, persentase kaki 0,73±0,111%, persentase jantung 0,09±0,02%, persentase hati0,39±0,033%, persentase paru 0,39±0,033%, persentase saluran pencernaan 1,03±0,107%,dan persentase ginjal 0,09±0,015%. Kelompok dengan bobot potong 376-460 kg menghasilkan persentase karkas 49,52±0,555%, persentase kepala 1,78±0,171%, persentase kulit 2,94±0,308%, persentase kaki 0,67±0,049%, persentase jantung 0,09±0,01%, persentase hati 0,33±0,031%, persentase paru 0,17±0,011%, persentase saluran pencernaan 0,88±0,113%dan persentase ginjal 0,07±0,014%. Data karkas dan non karkas dianalisis dengan variansirancangan acak lengkap pola searah.Hasil analisis menunjukkan bahwa bobot potong berpengaruh secara signifikan terhadap persentase karkas, kepala, kulit, hati, paru-paru, saluran pencernaan, dan ginjal. Bobot potong tidak berpengaruh secara signifikan terhadap persentasekaki dan jantung (P>0,05). Kata kunci: Kerbau, Bobot Potong, Karkas, Non Karkas
The aim of this research was to know the influence of slaughter weight on carcass percentage and non carcass in abattoir Kudus regency.Samples of this research are 80 male buffaloes by grouping slaughter weight 290-375 kg and 376-460 kg. The data are slaughter weight, carcass percentage and non carcass (head, legs, leather, liver, lungs, heart, alimentary tract, and kidneys). Based on the research obtained for the group 290-375 kg slaughter weight, the carcass percentage was 49,64±0,474%, the percentage of the head 2,48±0,297%, skin percentage 4,07±0,418%, the percentage of legs 0,73±0,111%, heart percentage 0,09±0,02%, liver percentage 0,39±0,033%, lungs percentage 0,39±0,033%, the percentage of the digestive tract 1,03±0,107%, and kidney percentage 0,09±0,015%. Carcass and non carcass data were analyzed with completely randomized design variance. The result shows that slaughter weight has significant effects onweight percentage of carcass, head, leather, liver, lungs, alimentary tract and kidney.
