Analisis Efisiensi Siklus Proses (Process Cycle Efficiency) pada Produksi Bolosego di Kabupaten Sleman Provinsi DIY

Bolosego is a small and medium-sized enterprise (SME) in the food industry, producing ready-to-eat protein products. The company faces the challenge of maintaining competitiveness amidst the rapid growth of the food industry in Indonesia. Challenges include perishable ingredients, inconsistent supply and quality, complex processing techniques and recipes, sensitivity to conditions and timing, and a lack of knowledge about production methods. These characteristics make the company highly vulnerable to waste. Bolosego's featured product, oseng mercon iga, has an average monthly sales volume of 64.000 packs. Initial observations of the oseng mercon iga production process revealed significant work-in-progress (WIP) inventory buildup in the kitchen area, which disrupts overall production activities.
This study analyzes the process cycle efficiency of oseng mercon iga production at Bolosego by identifying and analyzing waste using Value Stream Mapping (VSM). Subsequently, Value Stream Analysis Tools (VALSAT) were used to prioritize areas of waste for improvement. These prioritized areas were further analyzed using the Ishikawa diagram to determine the root causes of waste. Finally, recommendations for improvement were provided based on the root cause analysis.
The study identified overprocessing, overproduction, and inventory as the top waste priorities for improvement. The recommendations include implementing kaizen, production leveling, visual management, and establishing best practices. The implementation of these recommendations is estimated to increase Process Cycle Efficiency (PCE) by 0,02 percent, from an initial value of 0,16 percent to 0,18 percent.
