PENGARUH BANGSA SAPI DAN BOBOT POTONG TERHADAP PERSENTASE KARKAS DAN NON KARKAS DI RUMAH POTONG HEWAN MANCASAN SLEMAN

2013 | Skripsi | S1 PETERNAKANPENGARUH BANGSA SAPI DAN BOBOT POTONG TERHADAP PERSENTASE KARKAS DAN NON KARKAS DI RUMAH POTONG HEWAN MANCASAN SLEMAN Rissa Astriana 08/272622/PT/05593 INTISARI Penelitian ini bertujuan untuk mengetahui pengaruh bangsa terhadap hasil karkas dan non karkas yang dipotong di Rumah Potong Hewan Mancasan Sleman. Materi penelitian yang digunakan adalah sebanyak 120 ekor sapi yang terdiri dari sapi PO 40 ekor, sapi SimPO 40 ekor, dan sapi LimPO 40 ekor. Masing-masing bangsa dibagi menjadi dua kelompok yaitu bobot potong di atas 400 kg dan bobot potong di bawah 400 kg, sehingga masing-masing berjumlah 20 ekor. Data yang dikumpulkan meliputi bobot potong, bobot karkas, bobot daging, bobot tulang, rasio daging tulang, bobot hati, bobot kaki, bobot kepala, bobot kulit, bobot paru-paru. Data yang diperoleh dianalisis dengan analisis variansi dengan rancangan acak lengkap pada faktorial (3x2) dan dilanjutkan dengan Duncan’s Multiple Range Test. Hasil analisis mengindikasikan bangsa sapi SimPO dan LimPO memiliki persentase daging yang lebih tinggi daripada bangsa sapi PO, sedangkan pada komponen non karkas dapat disimpulkan bahwa bangsa sapi SimPO dan LimPO memiliki persentase kaki, persentase kulit yang lebih tinggi daripada bangsa sapi PO. Bobot potong lebih dari 400 kg memiliki persentase karkas, persentase daging, rasio daging tulang, dan persentase kulit yang lebih tinggi dari bobot potong kurang dari 400 kg. Terdapat interaksi persentase daging, persentase tulang, persentase hati, persentase kaki, persentase kepala, persentase kulit, dan persentase paru-paru. THE EFFECTS OF BREED AND SLAUHTHER WEIGHT ON CARCASS PERCENTAGE AT MANCASAN SLAUGTER HOUSE IN SLEMAN Rissa Astriana 08/272622/PT/05593 ABSTRACT This research was concluded to study effect of cattle breeds and slaughter weight on carcass and non-carcass yield at Mancasan slaughterhouse in Sleman. Materials used was 120 cattle consisted of 40 PO, 40 SimPO and 40 LimPO. Each breed was divided into above 400 kg slaughter weight and below 400 kg slaughter weight, so each had 20 cattle. Data collected was slaughter weight, carcass weight, meat weight, bone weight, meat tobone ratio, liver weight, leg weight, head weight, skin weight and lung weight. Data was analyzed by using variance analysis with completely random design on 3x2 factorial and followed by Duncan’s Multiple range Test. Results of analysis indicated that SimPO and LimPo cattle had higher average meat percentage than PO cattle, but SimPO and LimPO breed had higher average of leg percentage, skin percentage than PO cattle. Above 400 kg slaughter weight had higher carcass percentage, meat percentage, meat-bone percentage, skin percentage than 400 kg slaughter weight. There were interaction between cattle breed and slaughter weight on meat percentage, bone percentage, liver percentage, leg percentage, head percentage, skin percentage, and lung percentage.
