PENGARUH JENIS KELAMIN DAN UMUR TERHADAP HASIL KARKAS DAN NON KARKAS SAPI PERANAKAN ONGOLE (PO) DI RUMAH POTONG HEWAN KOTA YOGYAKARTA

Penelitian ini menggunakan 30 ekor sapi betina dan 30 ekor sapi jantan umur antara 3 sampai 5 tahun di rumah potong hewan Kota Yogykarta. Data yang diamati dari penelitian ini meliputi ukuran tubuh, bobot potong serta bobot dan persentase karkas, kaki, kepala, dan kulit. Data yang telah diperoleh, diuji dengan Rancangan Acak Lengkap Pola Faktorial 2 x 3, dua untuk kelompok jenis kelamin (jantan dan betina) dan tiga untuk kelompok umur ( 3, 4 dan 5 tahun). Ukuran tubuh, bobot potong, bobot dan persentase kakas, kulit, bobot kaki, bobot dan persentase kepala sapi jantan dan betina berbeda tidak nyata. Bobot potong, bobot karkas, kulit, kaki dan kepala sapi umur 5 tahun lebih tinggi (P<0,05) daripada sapi umur 3 dan 4 tahun, sedangkan persentase kepala sapi PO umur 4 tahun lebih tinggi (P<0,05) daripada umur 3 dan 5 tahun. Persentase kaki sapi umur 3 tahun lebih tinggi (P<0,05) daripada umur 4 dan 5 tahun. Terdapat interaksi antara jenis kelamin dan umur terhadap lingkar dada dan persentase kepala. Disimpulkan bahwa sapi PO pada umur 3 sampai 5 tahun, jenis kelamin tidak mempengaruhi ukuran tubuh, bobot potong, bobot dan persentase karkas, kulit, kaki, dan kepala. Umur mempengaruhi bobot potong, karkas, kulit serta bobot dan persentase kaki dan kepala, tetapi tidak mempengaruhi ukuran tubuh serta persentase karkas dan kulit sapi PO. EFFECTS OF SEX AND AGE ON CARCASS AND NON- CARCASS YIELD OF ONGOLE GRADE CATTLE AT YOGYAKARTA MUNICIPAL SLAUGHTER HOUSE Ria Apriliana 07/256611/PT/05382 ABSTRACT This study was aimed to observed the effect of sex and age on carcass and non carcass yield of Ongole Grade (PO) cattle. Thirty heads of bulls and thirty heads of cows aged from three to five years old at Yogyakarta municipal slaughterhouse were use in this research. The data observed were body size, life weight, also carcass, feet, head, and hide weight and percentage. The data collected were analyzed using 2x3 Factorial Completely Randomized Design (two sex groups bull and cow and three age groups 3, 4 and 5 years of age). Body size, body weight, carcass and hide weight and percentage, feet weights, head weight and percentage of bulls and cows had no significant difference. Body weight, carcass, hide, feet, and head weight of cattle at five years old were higher (P<0.05) than those of cattle at three and four years old, while head percentage at four years old were higher (P<0,05) compared three and five years old. Feet percentage at three years of cattle were higher (P<0,05) than those of cattle at four and five years old. There were interactions between sex and age on heart girth and the percentage of heads. It’s concluded that sex don’t affect the body size, body weight, carcass, hide, head weight and percentage of Ongole Grade cattle at three to five years old. The age of Ongole Grade cattle has affected life, carcass and hide weight, and also feet and head weight percentage, but has not effect on body size, carcass and hide percentage.
