Curcuma mangga is a medicinal plant that has
many benefits, but the simplicia of mango ginger is susceptible to microbial
contamination during post-harvest processing and storage, which can affect its
quality and safety. One method being developed for microbial decontamination is
the use of ozone, which has been proven effective in reducing microbes in
various types of food materials. The aim of this study was to assess the
effectiveness of ozone in reducing microbial contamination and its effects on
the levels of demethoxycurcumin and chemical composition in curcuma mangga. Curcuma mangga crude was purchased from Beringharjo Market,
Kranggan Market, and B2P2TOOT Tawangmangu. Ozonation was carried out at a
dosage of 10 g/h for a range of 0-120 minutes. Microbial contamination was
calculated by determining the Total Plate Count (TPC) and Yeast and Mold Count
(YMC) according to the requirements of the BPOM. The results showed that ozone
exposure for 30 minutes significantly reduced TPC values (p?0.05). The
demethoxycurcumin levels increased up to a duration of 90 minutes of exposure
with values of 0.037%; 0.033%; and 0.025%, and decreased at a duration of 120
minutes of exposure with values of 0.010%; 0.022%; and 0.019% at Beringharjo
Market, Kranggan Market, and B2P2TOOT Tawangmangu, respectively. Chemometric
analysis of HPLC data indicated that
