Evaluasi Penyelenggaraan Makanan di SDIT Khoiru Ummah Yogyakarta

Latar Belakang : Asupan gizi yang cukup sesuai anjuran pada anak usia sekolah diperlukan untuk menyediakan energi, pertumbuhan, menggantikan sel-sel tubuh yang rusak, dan untuk menjaga kesehatan. Program Pemberian Makanan (School Feeding) menjadi salah satu cara untuk menyukseskan Kampanye Sekolah Sehat. Peneliti tertarik untuk melihat bagaimana sistem penyelenggaran makanan (school feeding) di sekolah full day yang menyediakan makan siang untuk siswanya
Tujuan : Mengetahui Sistem Penyelenggaraan Makanan di SDIT Khoiru Ummah Yogyakarta
Metode : Penelitian ini merupakan jenis penelitian kualitatif dengan pendekatan evaluative dengan model evaluasi CIPP (context, input, process, product). Data dikumpulkan dengan wawancara dan observasi.
Hasil : SDIT Khoiru Ummah merupakan salah satu sekolah dasar swasta yang menerapkan full day school. Penyelenggaraan makanan dilaksanakan sejak tahun 2011. Berikut hasil evaluasi berdasarkan model CIPP : (1) Context : Tujuan program yaitu memenuhi kebutuhan gizi anak selama di sekolah; (2) Input : SDM yang dimiliki latar pendidikan rata-rata SMA; Peralatan & sarana prasarana yang dimiliki sudah mencukupi kebutuhan; Sasaran program yaitu semua siswa tahun ajaran 2023/2024; Bahan baku belum memiliki standar spesifikasi tertentu; Perlu dilakukan pengkajian ulang terkait food cost; Sekolah belum memiliki kebijakan terkait penyelenggaraan makanan; (2) Process : Persiapan bahan makanan sudah berjalan dengan baik namun perlu didokumentasikan; Proses produksi makanan cukup baik namun perlu ditingkatkan; Proses distribusi dilakukan menggunakan metode kombinasi; Hygiene sanitasi masih perlu ditingkatkan; Sekolah belum memiliki kebijakan tentang pengolahan limbah makanan; (3) Product : Makanan yang disajikan <80>Kesimpulan : Penyelenggaraan makanan di SDIT Khoiru Ummah Yogyakarta sudah berjalan dengan baik namun masih perlu ditingkatkan dalam pelaksanaan hygiene sanitasi serta perlu adanya Standar Operasional Prosedur (SOP) terkait proses penyelenggaraan makanan
Background: Adequate nutritional intake as recommended for school-age children is needed to provide energy, growth, replace damaged body cells, and to maintain health. The School Feeding Program is one way to make the Healthy Schools Campaign a success. Researchers are interested in seeing how the school feeding system works in full day schools that provide lunch for their students
Objective: To know the food delivery system at SDIT Khoiru Ummah Yogyakarta
Method: This research is a type of qualitative research with an evaluative approach using the CIPP (context, input, process, product) evaluation model. Data was collected by interviews and observations.
Result : SDIT Khoiru Ummah is one of the private elementary schools that implements full day school. Food provision has been implemented since 2011. The following are the evaluation results based on the CIPP model: (1) Context: SDIT Khoiru Ummah implements a full day school system and school feeding are carried out with the aim of meeting children's nutritional needs while at schools; (2) Input: the human resources possessed have an average high school educational background; The equipment and infrastructure owned are sufficient for needs; The program targets are students in the 2023/2024 academic year; Raw materials are obtained from several different suppliers; Procurement of food management budget from students' monthly tuition fees; The school does not yet have a food management policy; (2) Process: Food preparation is going well but needs to be documented; Food production is in accordance with regulations but needs to be increased; Distribution uses a combination method; Food management is sufficient to meet hygiene and sanitation requirements but needs to be improved; There is no policy regarding food waste processing; (3) Product: The food menu served is <80>Conclusion : Food management at SDIT Khoiru Ummah Yogyakarta has been running well but still needs to be improved in the implementation of hygiene, sanitation and the need for Standard Operating Procedures (SOP) related to the food service process.
