Karakteristik Karkas dan Non Karkas Ayam Aduan Pakhoy dan Pama dengan Jenis Kelamin Berbeda

Penelitian ini bertujuan untuk mengetahui karakteristik karkas dan non karkas ayam aduan Pakhoy dan Pama dengan jenis kelamin berbeda. Penelitian ini menggunakan ayam aduan Pakhoy dan Pama dengan jumlah sampel (n) yaitu 8 ekor jantan dan 8 ekor betina tiap jenisnya. Kedua jenis ayam tersebut dipotong pada umur potong yang sama yakni pada umur 2,5 bulan. Pemotongan ayam dilakukan sesuai dengan metode penyembelihan secara halal yang dilanjutkan hingga tahap parting. Variabel yang diamati meliputi bobot potong, bobot karkas, persentase karkas, persentase komposisi karkas (dada, paha, sayap, dan punggung), dan persentase komposisi non karkas (kepala dan leher, ceker, dan jeroan). Analisis data dilakukan menggunakan analisis variansi pola faktorial 2×2 (jenis ayam dan jenis kelamin). Hasil penelitian menunjukkan bahwa jenis ayam berpengaruh signifikan terhadap persentase dada, persentase paha, persentase sayap, persentase ceker, dan persentase jeroan ayam Pakhoy dan Pama. Jenis kelamin berpengaruh signifikan terhadap bobot potong, bobot karkas, persentase karkas, persentase dada, persentase paha, persentase sayap, persentase kepala dan leher, persentase ceker, dan persentase jeroan ayam Pakhoy dan Pama. Berdasarkan hasil penelitian dapat disimpulkan bahwa jenis ayam Pakhoy memiliki bobot potong, bobot karkas, persentase karkas, persentase dada, persentase kepala dan leher, dan persentase ceker yang lebih tinggi dibandingkan ayam Pama. Ayam jantan memiliki bobot potong, bobot karkas, persentase karkas, persentase paha, persentase punggung, persentase kepala dan leher, dan persentase ceker yang lebih tinggi dibandingkan ayam betina. Terdapat interaksi antara jenis ayam dan jenis kelamin terhadap persentase karkas, persentase dada, persentase paha, persentase sayap, persentase punggung, dan persentase ceker.

The study aimed to determine the characteristics of carcass and non carcass of Pakhoy and Pama fighting chickens with different sex. The study used 8 males and 8 females of each type of Pakhoy and Pama fighting chicken as samples (n). Both types of chickens were slaughtered at the same age, which was 2.5 months old. The chickens were slaughtered following halal slaughter methods, followed by the parting stage. The observed variables included slaughter weight, carcass weight, carcass percentage, percentage composition of the carcass (breast, thigh, wing, and back), and the percentage composition of non carcass (head and neck, shank, and offal). Data analysis was carried out using a 2×2 factorial pattern analysis of variance (chicken type and sex). The results indicated that the type of chicken significantly affected the percentage of breast, percentage of thigh, percentage of wing, percentage of shank, and percentage of offal of Pakhoy and Pama chickens. Sex significantly affected the slaughter weight, carcass weight, carcass percentage, percentage of breast, percentage of thigh, percentage of wing, percentage of head and neck, percentage of shank, and percentage of offal of Pakhoy and Pama chickens. Based on the research result, it can be concluded that Pakhoy chickens had higher slaughter weight, carcass weight, carcass percentage, percentage of breast, percentage of head and neck, and percentage of shank compared to Pama chickens. Male chickens had higher slaughter weight, carcass weight, carcass percentage, percentage of thigh, percentage of back, percentage of head and neck, and percentage of shank compared to female chickens. There was an interaction between chicken type and sex on the percentage of carcass, percentage of breast, percentage of thigh, percentage of wing, percentage of back, and percentage of shank.
