Pemanfaatan Biji Alpukat Sebagai Bahan Pembuatan Edible Film untuk Kemasan Primer Produk Jenang

Avocado seed waste can still be used instead of just throwing it away because it has a high starch content of 74.98% so that it can be used as the main ingredient in making of edible films. Edible film can be used as a food product packaging material that can replace plastic packaging which is not environmentally friendly. The use of edible film as food packaging also has the goal of maintaining the quality of the packaged material. Edible film that is applied to primary packaging for jenang products should have protective properties, one of the ingredients added in order to suppress damage is chitosan (0.25 g, 0.50 g and 0.75 g) which has antimicrobial properties. Glycerol was added (1.5 ml, 2 ml, and 2.5 ml) as a plasticizer to improve the rigidity of the edible film produced due to the addition of chitosan. The research methods starts from making avocado seed starch, making edible films, testing characteristics, determining the best formula, and hedonic testing the acceptability of edible films applied to jenang products.
Based this research the addition of chitosan and glycerol will significantly affect the overall character with the best formula chosen is the addition of 0.25 g chitosan and 2 ml of glycerol resulting in the characteristics of an edible film with an average thickness of 0.14 mm, an average thickness of 0.14 mm. the average color difference value was 34.44, the resulting clear zone average was 2.09 cm, and the average tensile strength and elongation were 3.22 N and 54.21 %, respectively. The application of edible film on jenang products showed a higher average value on the attributes of taste, color, aroma and texture so that it was concluded that the panelists liked it.
