Beetroot is a horticultural commodity that is easily damaged and cannot be stored for long. Post-harvest handling strategies for beet tubers using various plastic packaging and coating methods are needed to maintain the quality and shelf life of beet tubers. This research aims to determine the effect of chitosan coating and packaging types on the shelf life and quality of beet tubers. The research was carried out at the Horticulture Sub-Laboratory of the Faculty of Agriculture, samples of beet tubers used for the Boro beet variety with the brand name Ayumi 04 from PT Agrosid Manunggal Sentosa were taken from beet plants belonging to farmers in Kiyudan Village, Ketundan Village, Pakis District, Magelang Regency. The experiment used a Randomized Block Design with two factors, namely, factor 1 chitosan concentration and factor 2 type of packaging and consisted of 20 treatment combinations with 3 blocks as replications. There are 4 types of packaging, namely no packaging (Without), plastic packaging with holes (Perforated), ordinary plastic packaging (Ordinary) and plastic vacuumed (Vacuum). The chitosan concentration consists of 5 levels, namely 0, 0.5%, 1%, 1.5%, and 2%. The data obtained were analyzed using Anova analysis followed by the Tuckey test with a confidence level of 95% to determine the level of differences in values between treatments, and correlation using R studio software. Chitosan coating does not contribute to the shelf life and quality of beet tubers, while the use of perforated plastic packaging has a positive influence on the shelf life and quality of beet tubers. The use of perforated packaging can reduce the respiration rate, maintain the hardness of the beet tubers, a small percentage of damage, a visual quality rating (VQR) value that is still suitable for consumption until the 3rd week of storage, and the occurrence of membrane damage is quite small.
