IMPLEMENTASI BUDAYA 5S UNTUK MENDUKUNG PROGRAM GOOD MANUFACTURING PRACTICES (GMP) PADA INDUSTRI KERIPIK JAMUR CV KHAIRA BUANA MAS

CV Khaira Buana Mas is an MSME that produces mushroom chips and has obtained SPP-IRT. GMP has not been reinstated due to relocation and joining households to reduce costs. As an affordable solution, 5S is used to increase GMP implementation without financial burden. The research aims to assess aspects of GMP based on implementation of 5S, starting with determining GMP according to 5S concept. 5S score of less than 60% is analyzed using 5 why analysis method to identify root causes and provide recommendations for improving GMP.
Obtained the application of major minor 5S in each GMP. On Location & Environment major on Seiso (360), while minor on Seiri & Seiton (300), Production Room Building major on Seiri (840) and minor on Seiton (440), Major Seiri Production Equipment on Seiton, Seiso, and Seiketsu ( 100) and minor in Seiton (93,3), Facilities & Health and Hygiene and Sanitation major in Seiketsu (1200) and minor in Seiri (400), Employee Health & Hygiene major in Seiketsu (720) and minor in Seiso (100) , Maintenance & Hygiene Program major at Seiso (1386.67) and minor at Seiri (426.63), Storage major at Seiton, Seiketsu (573.3) and minor at Seiso (260), Supervision by Person in Charge is only related to 1 aspect Shitsuke (80), Employee training is also 1 aspect of Shitsuke (150). The causes of problems with 5S include item sorting absence, unregulated rooms, lack of understanding, and no employee training. Provided recommendations by identifying and evaluating items, rearranging rooms, educating owners/employees, making SOPs, and monitoring.
