Optimasi Kecepatan Gerak Axis, Voltase Micropump, dan Suhu Papan Cetak dalam Pembuatan Pancake Menggunakan Teknologi Additive Manufacturing

Wheat flour is one of the commodities that has experienced an increase in consumption over the past five years. This is identified from the changing consumption patterns in Indonesia from main foods ingridient such as rice to other commodities such as wheat flour. This change is supported by the relatively cheap price of wheat flour-based food and is supported by government programs on food diversification. The use of wheat flour raw materials in Indonesia is 66% by MSMEs and in the process, still does not use automation tools, so the variations still look the same or less custom. One way that can be done is by using 3D Printing to help process wheat flour to make food that is close with the desired design or custom design.
Printcake is one of the 3D Printing machines that can be used to process food made from wheat flour. The machine operates on the x and y axes with a static z axis and the main function is to make food in the form of pancakes. Research was conducted on the appropriate batter mixture to obtain batter properties that can be used as Printcake printing material and to study the combination of Printcake parameters so that it can print pancakes close to the desired design.
The research was conducted using full factorial Design Of Experiment (DOE) 3 levels and the results obtained indicate that the parameter that affects the print dimension according to the design is the micro-pump voltage parameter, while the parameters that affect the color change as desired are temperature, acceleration, and micro-pump voltage. The optimization results obtained are a combination of acceleration of 70m/s2, micro-pump voltage of 4 volts, and bed temperature at level 5. Pancake printing using this optimization result was also carried out and the average print results were better than the average research.
