POLA INTERAKSI SOSIAL PENGOLAH PANGAN LOKAL KALURAHAN SAMBIREJO KABUPATEN GUNUNGKIDUL DALAM PENGEMBANGAN INOVASI PRODUK OLAHAN PANGAN LOKAL

Penelitian ini bertujuan untuk mengetahui pola interaksi sosial dan struktur jaringan sosial antar pelaku usaha pangan lokal di Kalurahan Sambirejo, serta mengetahui peran aktor dalam pengembangan inovasi produk olahan pangan lokal. Metode dasar yang digunakan adalah kuantitatif eksploratif dengan analisis jaringan sosial (Social Network Analysis) whole network. Alat analisis yang digunakan adalah Pajek untuk mengetahui struktur jaringan sosial kontak sosial (undirected) dan komunikasi (directed), serta peran aktor yang diketahui melalui analisis struktur jaringan yang berupa size, density, average degree, klik, component, cutpoints, centralization, degree centrality, closeness centrality, dan betweenness centrality. Hasil penelitian menunjukkan bahwa: (1) Pola interaksi sosial dan struktur jaringan sosial yang terbentuk dikategorikan sebagai struktur radial personal network dengan kepadatan rendah, serta memiliki average degree atau aktor berinteraksi dengan aktor lain rata-rata sejumlah tiga aktor pada jaringan kontak sosial pengolah pangan lokal dalam pengembangan inovasi produk olahan pangan lokal, dan lima aktor pada jaringan komunikasi pengolah pangan lokal dalam pengembangan inovasi produk olahan pangan lokal; (2) Pada semua jaringan ditemukan aktor sentral, aktor periferal, dan aktor isolate. (3) Aktor sentral yang ditemukan dalam jaringan sosial pengolah pangan lokal kering adalah aktor A11 yang memiliki jabatan sebagai Ketua Kelompok Desa Prima Melati dan pada jaringan sosial pengolah pangan lokal basah adalah B26 selaku Bendahara dalam perkumpulan Kelompok Desa Prima Kusuma.

This study aims to determine social interaction pattern and the structure of social networks among local food producers in the Sambirejo Village, as well as to determine the role of actors in the development of processed local food innovation. The basic method used is quantitative exploratory with social network analysis (Social Network Analysis) whole network. The analytical tool used is Pajek to determine the structure of the social network of social contacts (undirected) and communication (directed), as well as the role of actors known through network structure analysis: size, density, average degree, click, component, cutpoints, centralization, degree centrality, closeness centrality, and betweenness centrality. The results showed that: (1) The pattern of social interaction and the structure of the social network was categorized as a radial personal network structure with low density, and has an average degree: three actors in the social contact network and five actors in communication network of local food producers in development of processed local food innovation; (2) In all networks, the central actors, peripheral actors, and isolated actors were found. (3) The central actor found in the dry snacks producers was A11 whose position was a Head of the Desa Prima Melati group and in the traditional food producers, the actor was B26 as Treasurer in Desa Prima Kusuma group.
