Diversifikasi Konsumsi Pangan Rumah Tangga Selama Pandemi Covid-19 di Kelurahan Tawangmangu Kecamatan Tawangmangu Kabupaten Karanganyar

Pangan adalah segala sesuatu yang berasal dari sumber hayati dan air, diolah maupun tidak diolah, yang dijadikan sebagai sumber energi untuk beraktivitas. Kualitas dan kuantitas pangan yang dikonsumsi suatu rumah tangga akan mempengaruhi asupan gizi sehingga akan mempengaruhi kesehatan anggota rumah tangga. Dari segi kuantitas, konsumsi pangan dapat dilihat dari tingkat konsumsi energi. Sementara kualitas pangan dapat dilihat dari tingkat diversifikasi konsumsi pangan. Tingkat diversifikasi pangan dapat diukur dengan skor Pola Pangan Harapan. Penelitian dilakukan di Kelurahan Tawangmangu, Kecamatan Tawangmangu, Kabupaten Karanganyar dengan tujuan untuk: (1) Mengetahui tingkat konsumsi energi rumah tangga di Kelurahan Tawangmangu selama pandemi Covid-19 (2) Mengetahui diversifikasi konsumsi pangan rumah tangga di Kelurahan Tawangmangu selama pandemi Covid-19 berdasarkan skor Pola Pangan Harapan (PPH) (3) Mengetahui faktor- faktor yang mempengaruhi diversfikasi konsumsi pangan rumah tangga berdasarkan skor Pola Pangan Harapan (PPH) di Kelurahan Tawangmangu selama pandemi Covid-19. Metode dasar penelitian ini adalah deskriptif analitis. Pengambilan sampel dilakukan secara proportional random sampling dengan jumlah sampel sebanyak 40 rumah tangga. Analisis data dilakukan dengan analisis rerata uji t satu sisi (one sample t test) dan analisis regresi linier berganda. Hasil penelitian menunjukkan bahwa (1) Konsumsi energi di Kelurahan Tawangmangu sebesar 1.809,82 kkal/kapita/hari dan nilai Tingkat Konsumsi Energi (TKE) sebesar 84,18% termasuk kategori defisit tingkat ringan (2) Skor Pola Pangan Harapan di Kelurahan Tawangmangu sebesar 75,74 termasuk kategori sedang (3) Faktor yang berpengaruh secara positif terhadap skor Pola Pangan Harapan adalah pendapatan dan faktor- faktor yang berpengaruh secara negatif terhadap skor Pola Pangan Harapan adalah harga daging ayam serta harga tempe, sedangkan pendidikan ibu, jumlah anggota rumah tangga, umur ibu, harga beras, harga telur, dan harga tahu tidak berpengaruh terhadap skor Pola Pangan Harapan.

Food is anything that comes from biological sources and water, processed or unprocessed, which is used as a source of energy for activities. The quality and quantity of food consumed by a household will affect nutritional intake so that it will affect the health of household members. In terms of quantity, food consumption can be seen from the level of energy consumption. Meanwhile, food quality can be seen from the level of diversification of food consumption. The level of food diversification can be measured by The Desirable Dietary Pattern score. The research was conducted in Tawangmangu District, Karanganyar Regency with the aim of (1) Knowing the level of household energy consumption in Tawangmangu Village during the Covid-19 pandemic (2) Knowing the diversification of household food consumption in Tawangmangu Village during the Covid-19 pandemic based on Score of Desirable Dietary Pattern (3) Knowing the factors that influence the diversification of household food consumption based on the score of Desirable Dietary Pattern in Tawangmangu Village during the Covid-19 pandemic. The basic method of this research is analytical descriptive. Sampling was carried out by proportional random sampling with a sample of 40 households. Data analysis was carried out using a one-sided t- test and multiple linear regression analysis. The result showed that (1) Energy consumption in Tawangmangu Village was 1.809,92 kcal/capita/day and the value of the Energy Consumption Level was 84,18% including the category of mild deficit (2) Desirable Dietary Pattern Score in Tawangmangu Village was 75,74 is included in the medium category (3) The factors that positively influence the score of the Desirable Dietary Pattern are income and the factors that negatively affect the score of Desirable Dietary Pattern are the price of chicken meat and the price of tempeh, while the mother’s education, the number of household members, mother’s age, price of rice, price of eggs, and price of tofu do not affect the score of Desirable Dietary Pattern
