Identifikasi Penyebab Perubahan Rasa pada Susu Pengganti Makan untuk Menurunkan Berat Badan di PT VWX, Bogor, Jawa Barat

PT VWX yang berlokasi di Bogor merupakan industri makanan dan minuman sehat yang memproduksi minuman kemasan yang menggunakan bahan baku utama, yaitu susu segar dengan kemasan tetrapak. Produk susu pengganti makan untuk menurunkan berat badan memiliki rasa khas susu dan rasa khas dari varian rasa yang digunakan. Permasalahan yang ditemukan pada PT VWX, yaitu terdapat perubahan rasa pada salah satu produk susu pengganti makan untuk menurunkan berat badan. Permasalahan kedua, yaitu PT VWX belum menentukan metode uji sel somatis untuk susu segar sebagai syarat mutu susu segar sesuai dengan SNI 3141.1 tahun 2011 Tentang Susu Segar. Oleh karena itu, penelitian ini bertujuan untuk mengidentifikasi penyebab perubahan rasa pada produk susu pengganti makan untuk menurunkan berat badan dan menentukan metode uji sel somatis yang efektif untuk digunakan di PT VWX Penulis menggunakan beberapa tahapan untuk menemukan permasalahan, yaitu pertama melalui brainstorming dengan bagian quality control (QC). Selanjutnya evaluasi dari hasil pengecekan pada proses produksi dari bahan baku hingga menjadi produk jadi, data yang dievaluasi didapatkan dari hasil wawancara pada bagian QC dan merupakan data hasil pengecekan. Terakhir yaitu studi literatur untuk memperkuat dugaan permasalahan yang akan dibahas dan penentuan metode uji sel somatis. Berdasarkan tahapan tersebut ditemukan suatu permasalahan, salah satu penyebab perubahan rasa yang paling memungkinkan terjadi, yaitu peningkatan jumlah sel somatis yang merupakan indikator dari mastitis subklinik pada susu. Pengujian jumlah sel somatis dapat dilakukan dengan beberapa metode, diantaranya metode langsung metode Breed dan metode tidak langsung metode IPB-1 dan metode CMT. Berdasarkan beberapa literatur metode uji sel somatis yang efektif digunakan di PT VWX adalah metode Breed. Metode Breed dipilih karena merupakan metode yang telah sesuai SNI 01-2782-1998/Rev.1992 tentang Metode Pengujian Susu Segar. Selain itu, merupakan metode langsung sehingga data yang dihasilkan objektif dan dapat digunakan dalam skala yang besar. Prosedur pengujian Metode Breed tidak membutuhkan banyak alat dan bahan serta proses pengerjaannya yang mudah dan cepat.

The second problem, namely PT VWX has not yet determined the somatic cell test method for fresh milk as a quality requirement for fresh milk in accordance with SNI 3141.1 2011. Therefore, this research aims to identify the causes of taste changes in meal replacement milk products for weight loss and determine effective somatic cell test methods for used at PT VWX The author uses several stages to find out the problem, first through brainstorming with the quality control section. Furthermore, the evaluation of the results of checking on the production process from raw materials to finished products, the data being evaluated is obtained from the results of interviews in the QC section and is the result of checking data. Finally, the study of literature to strengthen the alleged problem that will be discussed and the determination of somatic cell test methods. Based on this stage, a problem was found, one of the most likely causes of changes in taste, namely an increase in the number of excessive somatic cells which is an indicator of subclinical mastitis in milk. Somatic cell count testing can be done by several methods, such as direct method, namely the Breed method and the indirect method, namely the IPB-1 method and the CMT method. Based on some literature somatic cell test methods are effectively used at PT VWX, namely the Breed method. The Breed Method was chosen because it is a method that is in accordance with SNI 01-2782-1998 / Rev.1992 concerning the Fresh Milk Testing Method. In addition, it is a direct method so that the data generated is objective and can be used on a large scale. Testing procedure The Breed Method does not require a lot of tools and materials and the process is easy and fast.
